- Spread between layers of cake and then frost the sides and top.

Steps:
- Combine egg whites , brown sugar , water and corn syrup in top of a double broiler ; mix well
- Place top of double broiler over boiling water and beat constantly with a electric hand mixer until mixture forms peaks ; about 7 minutes.
- Remove from heat of the boiling water and add the vanilla and continue to beat until frosting is cool and thick enough to spread.
- Makes enough frosting to frost tops and sides of two 9" cakes. (a layer cake )
Tips:
- To achieve a smooth and creamy frosting, make sure all ingredients are at room temperature before mixing.
- Use a high-quality vanilla extract for the best flavor. Imitation vanilla will not produce the same results.
- If you don't have cream of tartar, you can substitute it with 1 teaspoon of lemon juice or vinegar.
