PISTACHIO FUDGE
This fudge is different from the other Pistachio Fudge on Food.com. I got it from a Facebook blog named Lady Behind The Curtain. Use a 3.4 ounce package of Instant Pudding. Food.com is not letting me enter the correct weight of the package.

NIGELLA LAWSON EASY CHOCOLATE PISTACHIO FUDGE
So easy and quick...great for an instant chocolate fix. Make these and put them directly into the freezer. This fudge stays nice and smooth but be sure to keep these cool. I use walnuts when I don't have pistachios.

Steps:
- Line a 23cm/9 inch square pan with foil and grease lightly -- I use the spray. Scatter nuts on the bottom of the prepared pan.
- Place the chocolate, condensed milk, butter and salt in a glass bowl and microwave on MED(50%) for about 4 minutes. Stir every minute until just melted.
- Pour the mixture on top of the nuts. You can smooth the top, if you want it to look tidy.
- Nigella recommends to let the fudge cool in the fridge til set, but I put it directly in the freezer. (So I can eat it sooner!) It can be eaten directly from the freezer, as it doesn't freeze hard.
- Cut into 2cm x 3cm pieces. Very rich and satisfying!
Tips:
- Mise en Place: Before starting, ensure all ingredients are measured, prepped, and ready to use. This will help streamline the baking process and prevent scrambling for ingredients during the bake.
- Crust Consistency: For the best consistency, use a food processor to achieve a fine crumb texture for the pie crust.
- Pie Plate Size: Ensure you have a 9-inch pie plate. Using a different size may affect the baking time and overall proportions of the pie.
- Egg Yolks: Bring the egg yolks to room temperature before using them. This will ensure they emulsify properly with the sugar, resulting in a smooth and creamy filling.
- Temperature Matters: Keep all dairy ingredients cold before adding them to the filling. Cold ingredients will help create a thicker, creamier texture in the pie.
- Don't Overmix: Avoid overmixing the pie filling. Stirring too much can result in curdling and a less smooth texture.
- Meringue Consistency: For the best results, whisk the egg whites gradually, starting slowly and increasing the speed as the whites begin to foam. This will help create stiff peaks without overbeating.
- Baking Patience: Avoid opening the oven during baking. Sudden changes in temperature can cause the filling to fall or the meringue to deflate.
- Cooling Time: Allow the pie to cool completely before serving. This will give the filling time to set and prevent a runny texture.
Conclusion:
With its irresistible combination of chocolate, sea salt, and pistachios, this Sea Salt Pistachio Fudge Pie is a decadent treat that will leave you craving more. The rich, creamy filling and the contrasting textures of the crunchy pistachios and flaky crust create a harmonious symphony of flavors. The pie is perfect for special occasions or as a delightful indulgence to enjoy with loved ones.
