8 oz fresh crabmeat, picked over for shells
3 Tbsp mayo
1 tsp lemon juice, freshly squeezed

15-20 slice colby cheese, cut into 1-inch squares about 1/8 inch thick

  • 2. Sauté the bacon until crisp, but not too crisp
  • 3. Remove from pan and allow to drain and cool on some paper towels
  • 4. Chef's Note: Reserve the bacon grease for another use (I'm planning on sautéing a couple of chicken breasts with it... but that's another recipe).
  • 5. Chop the bacon into small pieces and reserve.
  • 6. Add the mayo, lemon juice, salt & pepper (to taste), and the cayenne pepper to a bowl, and mix thoroughly.
  • 7. Carefully fold in the crab until fully incorporated.
  • 8. Place a heaping teaspoon of the crab mixture on a cracker, and add a few pieces of chopped bacon.

  • 10. Serve with a lemon or lime wedge. Enjoy.
  • 11. Keep the faith and keep cooking.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and utensils ready to go. This will help you stay organized and avoid scrambling.
  • Keep it Simple: Hors d'oeuvres are meant to be small bites, so don't try to get too fancy. Simple, elegant dishes are often the most popular.
  • Use Fresh Ingredients: The fresher your ingredients, the better your hors d'oeuvres will taste. Whenever possible, use seasonal produce and seafood.
  • Don't Overcook Your Seafood: Seafood is delicate and cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and chewy.
  • Make Ahead: Many hors d'oeuvres can be made ahead of time, which can save you time and stress on the day of your party.
  • Garnish Wisely: A few simple garnishes can really elevate the look of your hors d'oeuvres. Try using fresh herbs, citrus zest, or edible flowers.

Conclusion:

Seafood hors d'oeuvres are a delicious and elegant way to start any party or gathering. With a little planning and preparation, you can create impressive dishes that will wow your guests. So next time you're looking for a special appetizer, give one of these seafood hors d'oeuvre recipes a try.
