1/4 cup olive oil
1/2 cup diced onion
1/2 lb fresh salmon
2 cups red bell peppers, diced
1 cup green bell pepper, diced
1 cup yellow bell pepper, diced
1 cup tomatoes, diced
2 cups mushrooms, sliced
2 cups zucchini, sliced
1/4 cup light soy sauce
1/2 cup white wine
3/4 lb scallops
1/2 lb squid ring
1 lb large shrimp, cleaned
2 tablespoons Old Bay Seasoning

Steps:

  • In large skillet add the oil and heat. Add onions, saute until soft. Add salmon and cook for 10 minutes. Add remaining veggies and the soy sauce and wine and cook for another 3 minutes. Add all of the seafood ingredients and Old Bay Seasoning and cook for 3 -5 minutes or until shrimp are done, Do not overcook or your shrimp will be tough and rubbery.
