1 tablespoon extra-virgin olive oil
1 pound large shrimp, peeled and deveined
1/2 teaspoon red pepper flakes
1 medium shallot or 1/2 small red onion, minced

Cook until just pink, about 2 minutes, then flip and cook until no longer translucent,1 to 2 more minutes. Transfer to a plate.
  • Add the shallot to the skillet and cook, stirring with a wooden spoon, until translucent, about 2 minutes. Add the wine and cook, scraping up any browned bits, until slightly reduced, about 1 minute. Add the tomatoes, half of the basil, the remaining 1/4 teaspoon red pepper flakes and 1/4 teaspoon salt; cook until slightly thickened, about 5 minutes. Stir in the heavy cream and cook 1 more minute.
  • Return the shrimp and any collected juices to the skillet. Stir in the pasta; add enough of the reserved pasta cooking water to loosen the sauce. Season with salt. Top with the remaining basil.

Tips:

  • Use high-quality ingredients. Fresh seafood, ripe tomatoes, and flavorful spices will make all the difference in your dish.
  • Cook the pasta al dente. This means cooking it until it is tender but still has a slight bite to it. Overcooked pasta will be mushy and unpleasant.
  • Don't overcrowd the pan. When cooking the seafood, be sure to give it plenty of space so that it can cook evenly. Overcrowding the pan will result in steamed seafood, which is not as flavorful.
  • Use a flavorful sauce. The sauce is what really brings the dish together. Be sure to use a sauce that is packed with flavor, such as a tomato-based sauce or a creamy Alfredo sauce.
  • Garnish with fresh herbs. Fresh herbs, such as basil, parsley, or oregano, add a pop of color and flavor to the dish. They also help to brighten up the flavors of the seafood and the sauce.

Conclusion:

Seafood rigatoni is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover seafood, and it is also a great dish to serve at parties or potlucks. With a few simple tips, you can make a seafood rigatoni that is sure to impress your friends and family.
