Garlic Cloves
Vidalia or other sweet white onion
Red Onion
Cilantro
Red Wine Vinegar
Salt, freshly ground pepper, and sugar to taste
Red Peppers
Yellow Bell Peppers
Olive Oil
Vegetable oil spray
Halibut Steaks
Salt and freshly ground white pepper to taste
Vegetable Stock (recipe follows)
Portobello Mushrooms
Asparagus spears
Salt and freshly ground white pepper to taste
Cilantro Sprigs
Tomatoes
Carrots
Onions
Celery Stalks
Mushrooms
Coriander
Freshly ground black pepper
Thyme
Bay Leaf
Water

Steps:

  • To make the relish: Mix the garlic, onions, and cilantro with the vinegar. Season with salt and pepper. Add sugar, a little at a time, until it tastes "sweet and sour." To make the oils: Juice each pepper separately, or puree each pepper separately and pass the purees through fine-meshed sieves. In two small saucepans, cook the pepper juices over medium heat until they are reduced to syrup. Whisk 1/2 cup of oil into each. Season with salt and pepper. Put the pepper oils into separate squeeze bottles. To cook the halibut: Prepare a charcoal fire and let the coals burn until they are covered with white ash. Or, heat a gas grill to high. Spray a wire grill rack with vegetable oil spray and place over the fire to heat. Preheat the oven to 400 F. Season the halibut with salt and pepper. When the wire rack is hot, place the fish on the grill and sear for 30 seconds, leaving grill marks. Turn the fish 45 degrees with a spatula or tongs and sear for another 30 seconds on the same side. Turn over and sear for 30 seconds on the other side. The fish may also be seared in a grill pan on the stove. Put the fish in an ovenproof skillet or baking dish and add the vegetable stock. Bake until the fish in done through and flakes easily, 3 - 5 minutes. Place the mushrooms and asparagus on the grill or in a grill pan and cook 30 seconds. Turn and grill 30 seconds longer. Season with salt and pepper. To serve: Place 2 to 3 tablespoons of drained onion relish in the center of each plate. Lay the fish on top, criss-cross grill marks showing. Place grilled portobellos and asparagus around the fish. Garnish each with a cilantro sprig. Drizzle red and yellow pepper oils around the grilled vegetables. Carlos' Vegetable Stock Combine all ingredients in a large pot over high heat. Bring to a boil, reduce to medium-low, and simmer 1-1/2 to 2 hours. Strain through cheese cloth into a non-aluminum bowl. Cool to room temperature, cover with plastic wrap, and chill. The stock may also be frozen in ice cube trays for longer storage.

PAN SEARED HALIBUT

Pan Seared Halibut image

Halibut has a delicate flavor and firm texture. Overcooking can dry it out. So Pan searing and basting with the oil/ butter mixture keeps it moist and flaky. Pan searing adds a nice light crust to the outside of the halibut. Then into the oven to finish cooking.

Pan Seared Halibut with Garlic Chive Spaetzle, Lobster and Fava Beans with a Wild Mushroom Veloute image

Provided by Food Network

Categories     main-dish

Time 1h35m

Yield 2 servings

Number Of Ingredients 21

1 cup milk
1 cup all-purpose flour
5 whole eggs
1 teaspoon ground nutmeg
Salt and freshly ground black pepper
2 tablespoons minced garlic
Oil
2 tablespoons butter
2 shallots
1 cup mushrooms
1 cup leek whites
1 quart fish stock (chicken or vegetable will do)
1 quart cream
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1 (7-ounce) fillet halibut
2 tablespoons butter, divided
3 ounces spatzle
2 tablespoons blanched fava beans
2 ounces par-cooked lobster meat
2 ounces mushroom veloute

Steps:

  • Mix milk, flour, 5 whole eggs, nutmeg, 1 teaspoon of salt and freshly ground pepper and minced garlic until the dough forms. Allow to rest for 30 minutes. Over a pot of salted boiling water, pass the dough through a perforated pan or spaetzle maker. Once the dumplings float, strain out of the water and place them on a tray until room temperature. Moisten with a little oil and store for up to 2 days, refrigerated.
  • In a pot place 2 tablespoons of butter, 2 shallots, 1 cup of leeks and 1 cup of mushrooms and cook over medium heat for 15 minutes. Then add the fish stock and reduce by half. Add your 1-quart of cream and reduce by another two thirds. Place in a blender until smooth and pass through a strainer. Adjust with salt and pepper.
  • You will need 2 pans for cooking and a small pot for your sauce. In a pan on medium-high heat, add the oil and allow 30 seconds to heat up. Then place the fillet of fish away from you in a pan so it doesn't splash you. While the fish is cooking, put the other pan on high heat, place half of the butter and allow to brown slightly. Once slightly brown add the spatzle and allow to cook for about 1 1/2 minutes. At this stage add the fava beans and lobster; allow to cook for no more than 2 minutes.
  • Your fish should be almost cooked by this point with a nice golden brown crust, flip and finish for 1 minute. Place the sauces on warm plates with the spatzle saute in the middle and the drained fish on top.
