1 teaspoon salt, divided, or to taste
2 tablespoons garlic-seasoned rice wine vinegar

1 -1 1/2 lb pork tenderloin
1/4 cup soy sauce
2 garlic cloves, minced
3 tablespoons honey
2 tablespoons brown sugar
1 teaspoon fresh ginger, minced
2 tablespoons toasted sesame seeds
1 large English cucumber
1/2 small red onion, thinly sliced
1/4 cup rice wine vinegar
2 tablespoons lime juice
1 1/2 teaspoons sugar
2 tablespoons chopped fresh cilantro
2 tablespoons chopped unsalted peanuts

Steps:

  • Combine soy sauce and garlic in a small cup.
  • Place tenderloin in a resealable food storage bag; pour soy/garlic mixture over the pork; turn to coat and refrigerate for 1 to 2 hours.
  • While pork marinates, prepare cucumber salad.
