6 tablespoons water
2 teaspoons powdered unflavored gelatin
1 ½ cups milk
3 tablespoons white sugar
2 tablespoons black sesame paste

Steps:

  • Stir water and gelatin together in a bowl until gelatin dissolves.
  • Combine milk, sugar, and black sesame paste in a saucepan over medium heat; cook and stir until sugar melts, 2 to 4 minutes. Stir gelatin mixture into milk mixture; cook and stir pudding for 1 to 2 minutes. Remove from heat.
  • Chill pudding in the saucepan at room temperature for 5 minutes. Pour pudding into small bowls and refrigerate until chilled and set, about 2 hours.

1 tablespoon hot water
5 ounces milk
8 ounces fresh cream
2 tablespoons sugar
1/4 cup sesame seeds
3 tablespoons raw sugar
3 tablespoons water

  • grind sesame with blender, mixer, or food processor.
  • soak gelatin in the hot water.
  • pour milk, cream, sugar, and seasame into a pan and bring to a boil, then boil down.
  • removed from heat add gelatin and stir.
  • strain through a fine sieve.
  • pour the mixture into custard cups.
  • refrigerate for 1-2 hours.
  • next, make the sugar syrup.
  • pour water and bring to a boil and add sugar]let the syrup become proper consistency.
  • poour syrup over the pudding.

1/4 cup sugar (white or turbinado)
5 1/4 cups cold water
1/2 cup rice flour (not glutinous rice flour)
1/4 cup rock sugar (about 2 ounces)

Steps:

  • Heat a wok over high heat until hot but not smoking.Add sesame seeds and stir for 45 seconds-1 minute or until they stop crackling.Remove from heat and stir in the wok for 15 seconds longer before transferring to a bowl to cool.
