ROASTED CAULIFLOWER AND SESAME SPREAD

Categories     Condiment/Spread

Yield 2 cups

Number Of Ingredients 10

1 head of cauliflower (2 pounds), halved crosswise and thinly sliced
1/4 cup vegetable oil
1 1/2 tablespoons minced fresh ginger
1 1/2 teaspoons ground coriander
Kosher salt
3 tablespoons tahini (sesame) paste
3 tablespoons fresh lemon juice
3 tablespoons chopped cilantro
Sesame seeds
Pita bread or chips, for serving

Steps:

  • 1. Preheat the oven to 450°. In a large bowl, toss the cauliflower with the oil, ginger and coriander and season with salt. Spread the cauliflower on a rimmed baking sheet and roast for about 40 minutes, stirring once or twice, until tender and lightly browned in spots. Let cool slightly. 2. Transfer the cauliflower to a food processor. Add the tahini and lemon juice and pulse to a chunky puree; season with salt. Add the cilantro and pulse just until incorporated. Transfer the spread to a bowl and sprinkle with sesame seeds. Serve warm with pita bread or chips. Make ahead: The sesame-cauliflower spread can be refrigerated overnight.

Tips:

  • Choose the right cauliflower: Look for a head of cauliflower that is firm and has tightly packed florets. Avoid heads with any brown or yellow spots.
  • Cut the cauliflower into even-sized florets: This will help them cook evenly. If the florets are too large, they may not cook through in the same amount of time as the smaller ones.
  • Toss the cauliflower florets with olive oil, salt, and pepper: This will help them roast evenly and develop a nice golden brown color.
  • Spread the cauliflower florets in a single layer on a baking sheet: This will help them cook evenly and prevent them from steaming.
  • Roast the cauliflower florets at a high temperature: This will help them caramelize and develop a crispy exterior.
  • Keep an eye on the cauliflower florets while they are roasting: They can go from perfectly roasted to overcooked in a matter of minutes.
  • Serve the roasted cauliflower florets immediately: They are best enjoyed hot out of the oven.

Conclusion:

Sesame roasted cauliflower is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. With its crispy exterior and tender interior, sesame roasted cauliflower is sure to be a hit at your next gathering. So next time you are looking for a healthy and flavorful side dish, give sesame roasted cauliflower a try. You won't be disappointed!
