3 tablespoons sesame seeds
5 tablespoons toasted sesame oil
1/2 cup finely chopped scallions
2 tablespoons peeled, grated ginger
2 tablespoons lemon juice
1 tablespoon mayonnaise
1/2 teaspoon grated garlic

Time 23m

Yield 4 main course servings

Number Of Ingredients 11

4 salmon steaks, skin off, 6 to 7 ounces each
2 tablespoons canola oil
2 tablespoons white sesame seeds
2 tablespoons black sesame seeds
Salt and freshly ground black pepper
2 large shallots, peeled and finely chopped (about 1/4 cup)
1 tablespooon grated ginger
1 teaspoon hot chili oil
1/4 cup dry sherry
1/4 cup fish or clam broth
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 350 degrees.
  • Brush the salmon steaks lightly with some of the oil. Combine the two types of sesame seeds in a flat dish or pan and dredge the flesh side (not the skin side) in the sesame seeds and set aside. Combine the shallots, ginger, chili oil, sherry, broth and soy sauce in an oven-proof dish.
  • Season the steaks with salt and pepper.

  • Serve the roast salmon immediately with additional soy sauce, pickled ginger and chili sauce on the side.

TERIYAKI SALMON SKEWERS

Teriyaki Salmon Skewers image

The sweet dark flavour of teriyaki is an ideal match for salmon. This is an easy appetizer, perfect to pick up and enjoy with a glass of sparkling wine. By using a centre cut of salmon your skewers will be equal in size and cook evenly. Let your wooden skewers soak in water for about 20 minutes to prevent flare-ups in the oven. Tips:

  • Choose fresh, high-quality salmon. Look for fillets that are firm to the touch and have a vibrant color, such as pink or orange. Avoid any salmon that appears slimy or has an off odor.
  • Use wooden or metal skewers. Soak wooden skewers in water for at least 30 minutes before using to prevent them from burning. Metal skewers can be used without soaking.
  • Cut the salmon into 1-inch cubes. This will help the salmon cook evenly. If the cubes are too large, they may not cook through properly.
  • Marinate the salmon in a mixture of olive oil, lemon汁, and herbs. This will help to flavor the salmon and keep it moist while cooking.
  • Cook the salmon skewers over medium heat. This will help to prevent the salmon from overcooking and becoming dry.
  • Serve the salmon skewers immediately. They can be served with a variety of sides, such as grilled vegetables, rice, or salad.

Conclusion:

Sesame roasted salmon skewers are a delicious and healthy meal that can be enjoyed by people of all ages. They are easy to make and can be cooked in just a few minutes. The salmon is a good source of protein, omega-3 fatty acids, and other essential nutrients. The sesame seeds add a nutty flavor and crunch to the dish.
