300 g basmati rice, uncooked
5 eggs
50 g lightly-salted butter
20 g coriander, coarsely chopped
4 teaspoons seven-spice mix (thai)
1/2 teaspoon turmeric
200 g peas
200 g cut green beans
100 g unsalted cashews

  • Cook the basmati rice in plenty of boiling water for about 10-12 minutes until tender.
