Tips:

  • Choose the right sausage: A good quality, flavorful sausage is essential for this recipe. Look for a sausage that is made with fresh, high-quality meat and has a good balance of spices.
  • Use fresh jalapeños: Fresh jalapeños will give your armadillo eggs the best flavor. If you can't find fresh jalapeños, you can use canned or pickled jalapeños, but the flavor will be less vibrant.
  • Don't overcook the sausage: Overcooked sausage will be dry and tough. Cook the sausage until it is just cooked through, about 5 minutes per side.
  • Use a good quality cheese: A good quality, sharp cheddar cheese will give your armadillo eggs the best flavor. You can also use other types of cheese, such as mozzarella, Monterey Jack, or Pepper Jack.
  • Make sure the eggs are completely coated in the breadcrumb mixture: This will help to ensure that the eggs are evenly cooked and that the breadcrumb coating is crispy.

Conclusion:

Shake 'n Bake Armadillo Eggs are a fun and easy appetizer that is perfect for parties or potlucks. They are also a great way to use up leftover sausage and cheese. With their crispy breadcrumb coating, melted cheese, and spicy sausage filling, these armadillo eggs are sure to be a hit with everyone who tries them.
