Time 2h40m

Yield 8

Number Of Ingredients 13

1 pound fresh thick Chinese wheat noodles
¼ cup ketchup
3 ½ tablespoons sesame oil
3 ½ tablespoons soy sauce
2 tablespoons brown sugar
2 teaspoons kosher salt
1 ½ teaspoons lime juice
¼ cup chopped green onion
2 carrots, peeled and shredded
1 small zucchini, cut into matchsticks
1 red bell pepper, cut into matchsticks
1 tablespoon toasted sesame seeds
1 teaspoon crushed red pepper flakes

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the Chinese noodles, and return to a boil. Cook the noodles uncovered, stirring occasionally, until they have cooked through, about 5 minutes. Drain well in a colander set in the sink. Rinse the noodles with cold water several times to chill, then drain again.
  • In a large salad bowl, whisk together the ketchup, sesame oil, soy sauce, brown sugar, kosher salt, and lime juice until the brown sugar has dissolved. Place the noodles, green onion, carrots, zucchini, red pepper, sesame seeds, and red pepper flakes into the bowl, and gently toss to thoroughly mix the salad and coat with dressing. Chill at least 2 hours before serving.

TOFU AND NOODLE SALAD WITH PEANUT SAUCE

Tofu and Noodle Salad With Peanut Sauce image

This is just really yummy! A terrific after-work, summertime meal. I found this one in the Daily Herald and they attribute it to John Ash. I find the noodles, radish and pea shoots in my local Oriental grocery store. Prep time doesn't include marinading time.

Number Of Ingredients 15

1 lb firm tofu, drained
1/3 cup soy sauce
1/3 cup mirin (sweet rice wine)
2 teaspoons peeled and minced fresh ginger

6 ounces daikon radishes or 6 ounces other radishes, cut into long matchstick shapes
2 cups fresh pea shoots
1 cup carrot, cut into fine matchstick shapes
3 tablespoons smooth peanut butter
1 teaspoon asian chili paste with garlic
3 tablespoons chicken broth or 3 tablespoons water
1/3 cup coconut milk

  • Divide the mixture among 4 plates or shallow bowls and top with the pieces of tofu and drizzle with a bit more of the sauce.

SICHUAN CELERY AND TOFU SALAD

Sichuan Celery and Tofu Salad image

This otherwise simple salad, adapted from a dish at Szechuan Gourmet in Manhattan, may require a trip to a Chinese market for Szechuan peppercorns and pressed tofu. And you'll need to make your own chili oil! But here's the thing. The effort, which really isn't much more than difficult shopping, produces an elegant dish that is worth whatever shoe leather or mileage you'll expend getting the ingredients together. It is astonishingly good. And we'll even allow one substitution. You can use regular celery instead of the Chinese version!

Time 20m

Yield 4 servings

Number Of Ingredients 12

1 cup peanut oil
1 piece ginger, 2 inches long, cut into 3 or 4 slices
1 piece cinnamon, 3 inches long
3 cloves
1 teaspoon coriander seeds
1 teaspoon cumin seeds
4 star anise
1 tablespoon Sichuan peppercorns
1/4 cup red chile flakes, or more to taste
Salt
1 bunch Chinese celery, or regular celery, thinly sliced
4 to 6 ounces pressed tofu, thinly sliced or julienned

Steps:

  • Heat oil in a small saucepan over medium-high heat; when it simmers, add ginger, cinnamon, cloves, coriander, cumin, star anise, Sichuan peppercorns and chili flakes. Remove from heat and let sit until cool, at least 1 hour and preferably 2 or 3. Strain oil into a bowl or jar and discard spices.
  • Put a pot of salted water over high heat and bring to a boil. Add celery and blanch for about a minute; drain in colander and run under cold water to stop the cooking process.
  • Layer celery and tofu on serving plates, drizzle with chili oil and sprinkle with salt.

Tips:

  • Use extra firm tofu for this salad. This type of tofu holds its shape well when cooked, and it will absorb the flavors of the marinade better.
  • To make the tofu more flavorful, marinate it for at least 30 minutes, or up to overnight. You can use a variety of marinades, such as soy sauce, rice vinegar, garlic, ginger, or sesame oil.
  • When cooking the tofu, be sure to press it firmly to remove excess water. This will help it to crisp up in the pan.
  • For a crispy tofu, pan-fry it over medium-high heat until it is golden brown and crispy on all sides.
  • If you are short on time, you can also bake the tofu in the oven at 400 degrees Fahrenheit for 20-25 minutes, or until it is crispy.
  • To make the peanut sauce, simply whisk together peanut butter, soy sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. You can also add a little bit of honey or sugar to taste.
  • For a more flavorful peanut sauce, use creamy peanut butter instead of chunky peanut butter.
  • To serve the salad, simply toss the tofu, vegetables, and peanuts in the peanut sauce. You can also add some fresh herbs, such as cilantro or basil, for garnish.

Conclusion:

Shanghai Tofu and Peanut Salad is a delicious and healthy dish that is perfect for a summer meal.
