CLASSIC MINESTRONE SOUP

- Heat olive oil in a large saucepan or Dutch oven over medium-high heat. Cook onion, carrot, celery, garlic and rosemary until vegetables begin to soften, about 5 minutes.
- Stir in tomato sauce, beans and 2 1/2 cups water. Add broth, zucchini, pasta and pepper; bring to a simmer. Cook, uncovered, 10 minutes or until pasta is tender, stirring occasionally. Stir in parsley. Serve topped with Parmesan cheese and additional parsley, if desired.

SHIRLEY'S MINESTRONE
Steps:
- Place meat in deep cooker. Add water, salt, and dried beans. Cover and bring to a boil. Skim. Cover and simmer several hours. Heat oil in skillet. Saute garlic, onions, and parsley. Chop meat. Remove fat. Add remaining ingredients, except macaroni and cheese. Simmer 30 minutes. Add macaroni. Serve with cheese.
CLASSIC MINESTRONE
Steps:
- In a casserole heat the olive oil. Add the onions and cook until golden, about 5 to 7 minutes. Then add the carrots and celery and cook over low heat, stirring occasionally, for 5 minutes. Add the beans, bay leaf and thyme and toss for 1 minute. Then add the beef stock, Parmesan rind (if using), plum tomatoes and their juice, and salt and pepper to taste. (Careful with the amount of salt since Parmesan rind will add a salty flavor.) Bring to a boil, reduce heat and simmer for 1 hour. Add the potatoes, zucchini and savoy cabbage and cook for 20 minutes more or until the vegetables are tender. Finally, add your pasta and cook, covered, for about 10 minutes. Season to taste with salt and pepper, ladle into bowls and serve with some pesto.

Steps:
- In a large bowl, mix 2 cups of flour, sugar, salt and UNDISSOLVED Yeast.
- Combine, milk waterand margarine in a sauce pan.
- Heat over low heat until very warm (butter does not need to melt).
- Gradually add to dry ingredients and beat 2 minutes.
- Add eggs and 3/4 cup flour; beat 2 more minutes.
- Stir in enough more flour to make a stiff dough.
- Turn out on a lightly floured board.
- Knead until smooth and elastic, about 10 minutes.
- Cover with plastic wrap and then a towel; let rise 20 minutes.
- Punch down dough.
- Form into round balls and place in greased pan.
- Brush with oil.
- Cover pans (loosely) with plastic wrap.
- Refrigerate 2 to 24 hours.
- When ready to bake, remove from refrigerator and uncover CAREFULLY.
- Let stand at room temperature 10 minutes.
- BAKE AT 375° for 20 to 25 minutes or until done.
- When done brush with butter and enjoy!

- Heat 2 tablespoons olive oil in large stock pot over medium-high heat. Add pancetta; cook and stir until it begins to brown, 2 to 3 minutes. Stir in onions and celery; cook and stir until onions start to turn translucent, about 3 minutes. Stir in minced garlic and cook for another minute.
- Pour chicken broth, water, and plum tomatoes into the pancetta and onion mixture. Bring to a simmer.
- Stir cranberry beans, cabbage, garbanzo beans, red pepper flakes, Italian seasoning, and 2 teaspoons salt into broth mixture. Bring to a simmer and cook until cranberry beans are tender, adding more water as needed if the soup becomes too thick, about 45 minutes.
- Stir in Swiss chard and simmer until softened, about 15 minutes. Season with salt and black pepper to taste.
- Stir in pasta and increase heat to medium-high and simmer until pasta is tender, about 15 minutes. Ladle into bowls and top with extra virgin olive oil, Parmigiano-Reggiano cheese, and Italian parsley.

I love adding a little bit of brightness and freshness to any soup with a pistou, the French version of a pesto, here with the nuttiness of toasted walnuts.

- For the soup: Heat 2 tablespoons of the oil in a large heavy pot over medium-high heat. Cook the mushrooms, undisturbed, until browned underneath, about 2 minutes. Toss and continue to cook, tossing occasionally, until browned on both sides and tender, 2 to 3 minutes. Season with salt and pepper and transfer to a medium bowl.
- Heat the butter and remaining 2 tablespoons oil in the same pot over medium-high heat. Add the onions, garlic, cabbage, squash, tomatoes, green beans, 1 tablespoon salt and 1/4 teaspoon pepper and cook, stirring occasionally, until the vegetables are softened but not browned, 6 to 8 minutes. - Divide the soup among bowls and top with the pistou.
