1 cup boiling water
3 tablespoons melted butter
2 large eggs
1 cup milk
2 teaspoons baking powder

Steps:

2 tablespoons unsalted butter, plus more for dish
2/3 cup yellow or white cornmeal
1 teaspoon coarse salt
1 tablespoon sugar
2 cups whole milk, scalded
3 eggs, separated
2 teaspoons baking powder
Pinch of salt

  • Preheat the oven to 350 degrees. Lightly butter a 1 1/2-quart souffle dish.

2 teaspoons kosher salt
2 cups stone-ground yellow cornmeal
1 cup grated Parmesan
A few dashes hot sauce
4 large eggs
1/4 cup chopped chives, plus more for garnish

Steps:

  • Preheat the oven to 350 degrees F. Grease a 3-quart baking dish with 2 tablespoons of the butter.
  • Combine the milk, water, salt and the remaining 4 tablespoons butter in a medium saucepot; bring to a boil. Add the cornmeal in a steady stream while whisking rapidly. Continue stirring until the mixture returns to a simmer. Reduce the heat and simmer, stirring occasionally, until the mixture is very thick, 6 to 10 minutes. 1 cup cornmeal

  • Pour the milk into the upper part of a double boiler and cook over hot water until the milk almost reaches a boil. Add the cornmeal slowly, stirring constantly. It's slightly sweet from the kernels, a bit of sugar and vanilla extract, but gently tangy from sour cream, relying upon simple ingredients that come together into something great. This version uses fresh or frozen crawfish, but don't worry if crawfish isn't available to you: Spoonbread is still wonderful without it.
