Tips for Making the Best Shish Tawook:

  • Use high-quality chicken: Opt for boneless, skinless chicken breasts or thighs that are fresh and evenly sized for consistent cooking.
  • Marinate the chicken properly: The yogurt-based marinade is key to tender and flavorful shish tawook. Ensure the chicken is well-coated and refrigerated for at least 30 minutes, or up to overnight.
  • Skewer the chicken carefully: Use metal or wooden skewers that have been soaked in water to prevent burning. Thread the chicken pieces onto the skewers, leaving a little space between them for even cooking.
  • Cook the shish tawook over medium heat: This allows the chicken to cook thoroughly without drying out. If using a grill, preheat it to medium-high heat and cook the skewers for 8-10 minutes, turning occasionally.
  • Serve with your favorite sides: Shish tawook pairs well with various sides such as grilled vegetables, rice, pita bread, hummus, or tabbouleh. Serve with a squeeze of lemon juice for extra flavor.

Conclusion:

Shish tawook is a delicious and versatile dish that can be enjoyed as a main course or as part of a mezze platter. With its tender chicken, aromatic marinade, and customizable sides, it's a crowd-pleaser perfect for gatherings and special occasions. Whether you're grilling it outdoors or cooking it in a skillet, the key is to marinate the chicken well and cook it over medium heat to achieve perfectly juicy and flavorful shish tawook.
