1/2 orange, zested
2 large eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons whole milk
One 30-ounce can cherry pie filling

Tips:

  • Always use cold butter for the shortbread crust. This will help keep the crust flaky and prevent it from spreading too much.
  • If you don't have a food processor, you can use a pastry blender or two forks to cut the butter into the flour.
  • Be sure to press the shortbread crust firmly into the pan. This will help prevent it from crumbling when you cut it into bars.
  • Chill the shortbread crust for at least 30 minutes before baking. This will help it hold its shape.
  • Use fresh cherries for the filling. Frozen cherries can be used, but they will not be as flavorful.
  • If you don't have cherry pie filling, you can make your own by mixing together 2 cups of fresh cherries, 1/2 cup of sugar, 1/4 cup of cornstarch, and 1/4 teaspoon of almond extract.
  • Bake the bars until the crust is golden brown and the filling is bubbling.
  • Let the bars cool completely before cutting them into squares.

Conclusion:

Shortbread cherry cookie bars are a delicious and easy-to-make treat that is perfect for any occasion. They have a flaky shortbread crust, a sweet and tart cherry filling, and a crunchy streusel topping. These bars are sure to be a hit with everyone who tries them.
