12 ounces penne pasta, or your choice of pasta
1 cup shredded red cabbage
1 cup matchstick carrots
1/2 bell pepper, thinly sliced
2 grilled chicken breast fillets, sliced
1/3 cup unsalted peanuts
1/2 cup chopped cilantro

Steps:

1 deli-roasted chicken (2 1/4 pound)
4 cups water
2 ramen noodles (3 ounce packages )
3/4 cup peanut butter (reduced-fat )
3/4 cup light coconut milk
1/4 cup cilantro (snipped fresh )
1/4 cup lime juice
1 tablespoon sugar
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 small seedless cucumber (peeled, halved lengthwise, and cut into 1/4-inch slices)
1 red bell pepper (thinly sliced)
6 green onions (thinly sliced)
1/4 cup roasted peanuts (chopped )
Lime (cut into wedges)

Steps:

  • Remove and discard skin and bones from chicken. Cut chicken into strips. In a medium saucepan bring water to boiling. Break up each package of noodles (discard seasoning packets or save for another use). Add ramen noodles to boiling water. Remove from heat; cover and let stand for 5 minutes.
  • Meanwhile, in large bowl whisk together peanut butter, coconut milk, cilantro, lime juice, sugar, salt, and cayenne pepper until smooth. Add chicken, cucumber, red bell pepper and green onions to peanut butter mixture; stir to coat.
  • Drain noodles; rinse with cold water and drain. In a large bowl combine chicken mixture and noodles; toss to combine. Sprinkle with the chopped roasted peanuts and serve with lime wedges. Enjoy!

1-1/2 teaspoons rice vinegar

¼ cup lemon juice
1 tablespoon sesame seeds
1 teaspoon fresh ginger, grated

1 ½ lb boneless, skinless chicken breast
½ cup olive oil
1 head green leaf lettuce, roughly chopped
1 mango, pitted and cubed
1 red bell pepper, seeded and thinly sliced
1 orange bell pepper, seeded and thinly sliced
10 green beans, thinly sliced on the bias
1 avocado, sliced
1 scallion, greens only, finely chopped

Steps:
