Categories     main-dish

Time 35m

Yield 2 to 4 servings

Number Of Ingredients 14

1/2 cup low-sodium soy sauce
2 tablespoons cornstarch
2 tablespoons sugar
2 tablespoons rice wine vinegar
1 tablespoon minced fresh ginger
1/2 teaspoon crushed red pepper flakes, plus more for garnish
3 tablespoons peanut oil
1 red bell pepper, seeds removed and cut in thin strips
1 yellow bell pepper, seeds removed and cut in thin strips
1 pound jumbo shrimp, peeled and deveined
5 scallions, cut into 1/2-inch pieces
1 cup packed curly kale, stemmed and hand torn
1 tablespoon chopped fresh cilantro
2 teaspoons chopped fresh mint

Steps:

  • In a bowl or measuring cup, mix together the soy sauce, cornstarch, sugar, rice wine vinegar, ginger and crushed red pepper flakes.
  • Heat the oil in a large high-sided skillet or wok over high heat. Add the bell peppers and stir until browned, 1 to 2 minutes. Scoot the peppers to the edge of the pan, creating an opening in the center.
  • Add the shrimp in a single layer to the center of the pan and cook until just beginning to turn pink, 1 to 2 minutes. Add three-quarters of your scallions (hold back the rest for garnishing at the end) and stir everything together.
  • Add the kale and cook until wilted, about 2 minutes. Next, pour in the sauce and allow it to bubble and thicken in the pan while stirring, about 1 minute. The sauce should really cling to the shrimp and vegetables. Remove from the heat.
  • Sprinkle everything with the cilantro and mint and stir to combine. Garnish with more red pepper flakes and the remaining scallions before serving.

Time 1h40m

Yield 6

Number Of Ingredients 14

6 bell peppers
2 ½ cups chunky tomato sauce
½ onion, very thinly sliced
1 cup beef broth
¼ teaspoon red pepper flakes
1 ½ pounds lean ground beef
1 ½ cups cooked rice
½ cup freshly shredded Parmigiano-Reggiano cheese
¼ cup chopped fresh flat-leaf parsley
½ cup chunky tomato sauce, divided
4 cloves garlic, minced
2 teaspoons salt
½ teaspoon freshly ground black pepper
1 tablespoon chopped fresh flat-leaf parsley, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Slice the top 1/2 inch from the tops of peppers and cut out the stems from the tops. Cut the core from the inside of the peppers and strip away any seeds. Cut away a very thin slice of pepper from the bottoms so the peppers can stand upright. Poke about 4 tiny holes in the bottoms to let juices drain out.
  • Pour 2 1/2 cups tomato sauce into a 9x13-inch baking dish. Add onion, beef broth, and red pepper flakes; spread out mixture evenly over the bottom. Set prepared bell peppers upright in the dish.
  • Combine ground beef, cooked rice, Parmigiano-Reggiano cheese, 1/4 cup parsley, 2 tablespoons tomato sauce, garlic, salt, and black pepper in a large mixing bowl.
  • Lightly stuff peppers with meat mixture. Spread 1 tablespoon remaining tomato sauce on top of each portion of stuffing; place reserved tops onto peppers. Lay a piece of parchment paper loosely on top of peppers and cover dish tightly with foil. Lay dish on a baking sheet.
  • Bake in preheated oven for 1 hour. Peppers should be starting to soften. Remove foil and parchment paper. Continue to bake until meat filling is cooked through and the peppers are tender, 20 to 30 more minutes. Sprinkle each pepper with 1/2 teaspoon parsley and drizzle with a spoonful of pan juices.

Fun Fact: Beauvoir (circa 1848-1851), located in Biloxi, Mississippi, is the retirement home of Jefferson Davis, President of the Confederate States of America. The compound consisted of approximately 608 acres when Davis lived there (today, the site is approximately 52 acres in size). The name "Beauvoir" means "beautiful to view." The home faces the Gulf of Mexico and Spanish moss hangs from many of the large old trees on the property. Beauvoir and the Jefferson Davis Presidential Library suffered heavy damage from Hurricane Katrina on August 29, 2005. These two structures can and will be restored given time and funding. However, the Library pavilion (where Jefferson Davis penned "The Rise and Fall of the Confederate Government"), the Hayes cottage, Soldier's Home Barracks replica, Confederate Soldier's Museum, Giftshop, and director's home were totally destroyed. Replicas of those buildings totally destroyed will be built after the restoration of Beauvoir House and Presidential Library are complete. Prior to Katrina, the Jefferson Davis Presidential Library maintained a collection of 12,000 books on United States history, southern history, and history of the American Civil War. The library also maintained collections of photographs, personal letters, manuscripts, envelopes, postcards, newspaper clippings, records of Confederate heritage organizations such as the United Confederate Veterans and the Sons of Confederate Veterans, and records from the Veterans home that once was present on the grounds. Many of these records survived, and the salvageability of the collections stands at about sixty percent.

Tips:

  • Choose the Right Peppers: Select bell peppers that are firm, brightly colored, and have smooth skin. Avoid peppers with bruises or blemishes.
  • Prepare the Peppers Properly: Cut the tops off the peppers and remove the seeds and ribs. Rinse the peppers thoroughly and pat them dry.
  • Cook the Rice Perfectly: Use a long-grain rice such as basmati or jasmine for the best results. Rinse the rice thoroughly before cooking to remove the starch. Cook the rice according to the package instructions.
  • Season the Filling Generously: Don't be afraid to add plenty of herbs and spices to the shrimp and rice filling. This will give the dish a lot of flavor.
  • Stuff the Peppers Evenly: Divide the rice and shrimp mixture evenly among the bell peppers. Don't overstuff the peppers, or they will be difficult to cook evenly.
  • Bake the Peppers Thoroughly: Bake the stuffed peppers at a high temperature (400°F/200°C) for about 30 minutes, or until the peppers are tender and the filling is cooked through.
  • Top with Cheese (Optional): If desired, top the stuffed peppers with shredded cheese before baking. This will give the dish a cheesy, golden-brown crust.
  • Serve Hot: Stuffed bell peppers are best served hot out of the oven. They can be served as a main course or as a side dish.

Conclusion:

Shrimp and rice stuffed bell peppers are a delicious and versatile dish that can be enjoyed for lunch, dinner, or even as a snack. They are easy to make and can be tailored to your own taste preferences. This recipe provides a basic framework for making stuffed bell peppers, but feel free to experiment with different fillings, such as ground beef, turkey, or vegetables.
