Time 35m

Number Of Ingredients 11

8 ounces whole-wheat rotini pasta
4 cups broccoli florets
1 ½ tablespoons extra-virgin olive oil
2 large cloves garlic, thinly sliced
12 ounces large raw shrimp, peeled and deveined
¼ teaspoon crushed red pepper
½ cup plus 1 tablespoon chive-and-onion cream cheese
⅓ cup half-and-half
1 ½ tablespoons chopped fresh tarragon
1 tablespoon lemon juice
¼ teaspoon salt

Steps:

  • Bring a large pot of water to a boil. Add pasta; cook, undisturbed, for 6 minutes. Add broccoli to the pot; cook, undisturbed, until the pasta is al dente and the broccoli is tender-crisp, 2 to 3 minutes. Drain, reserving 1/2 cup cooking water.
  • Heat oil in a deep, large skillet over medium heat. Add garlic; cook, stirring often, until softened, about 1 minute. Add shrimp and crushed red pepper; cook, stirring and turning the shrimp often, until the shrimp are just slightly translucent in the center, 2 to 3 minutes. Increase heat to medium-high; stir in cream cheese, half-and-half and the reserved 1/2 cup cooking water. Cook, stirring constantly, until the sauce is smooth and slightly thickened, about 3 minutes. Add the pasta-broccoli mixture, tarragon, lemon juice and salt; cook, stirring constantly, until the sauce coats the pasta, about 2 minutes.

Tips:

  • Prep work: Before you start cooking, make sure to wash and chop the broccoli into bite-sized florets. Devein and peel the shrimp, removing the tails if desired.
  • Cook the pasta: While the shrimp and broccoli are cooking, bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain the pasta and set aside.
  • Use good quality ingredients: Fresh, high-quality ingredients will make a big difference in the flavor of your dish. Look for plump, firm shrimp and broccoli with bright green florets.
  • Don't overcook the shrimp: Shrimp cooks quickly, so be careful not to overcook it. Overcooked shrimp will become tough and rubbery.
  • Add the pasta to the sauce: Once the sauce has thickened, add the cooked pasta and stir to combine. Heat through for a few minutes, until the pasta is evenly coated with the sauce.

Conclusion:

Shrimp broccoli with pasta is a quick and easy weeknight meal that's packed with flavor.
