I have not tried it yet, but it looks very easy and interesting. Finnish apple snow is tradionally served in a glass bowl with a pinch of cinnamon sprinkled on the top.

- Cook apples in a covered pan with little or no water, stirring frequently. When apples are cooked add a little sugar to taste, and whisk to a smooth puree. If it is too stiff add just a little boiling water. Allow to cool.
- Beat the egg whites with a pinch of salt in a large mixing bowl and gradually add the sugar, beating as fast as you can until whites form stiff peaks.
- Add lemon juice to the apple puree in another large bowl.
- Stir in a little of the beaten egg whites, and finally fold in the rest of the whites until well blended.

- In a small bowl, combine the milk, half-and-half, and 6 tablespoons sugar. Cut the vanilla bean in half the long way, and scrape out the tiny black seeds inside. Add the bean and the scrapings to the milk mixture. Stir with a spoon until the sugar is dissolved.
- Put the egg whites into a clean metal bowl, and beat them with a whisk or beater until they are thick and white and will hold the shape of soft peaks when you lift up the whisk. Add 1 tablespoon sugar to the whites and beat until the form stiff peaks.
- Remove the vanilla bean from the milk mixture. (If you let it dry, it can be used again for something else.) Add the egg whites to the milk mixture, and use a spatula to gently fold the two together. You can use a whisk to gently break up any large bits of whites. - Insert a lollipop stick into the stem end of each apple.
- Line a baking sheet with parchment paper or wax paper.
- Add the sugar, water, and corn syrup to a medium saucepan fitted with a candy thermometer. Bring to a boil over medium heat, then cook until the temperature reaches 300°F (150°C), about 5 minutes. Remove the pot from the heat and stir in the red food coloring.
- Dip the apples in the syrup to coat entirely, then set on the prepared baking sheet. Let cool until the candy hardens, about 5 minutes.

- Core, peel and slice cooking apples and 2 tablespoons of sugar and simmer gently for about 10 minutes until soft. Put aside to cool
- Mix custard powder with 1 tablespoon of sugar and a little of the milk, gradually stir in remainder of milk. Bring to boil and simmer for about 5 mins until thick. Remove from heat add in egg yolk. Put into a serving bowl, cover with cling and allow to cool.
