Time 20m

Yield 6 to 8 sandwiches

Number Of Ingredients 13

1/2 cup almond butter
1/2 teaspoon almond extract
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking soda
1/2 teaspoon fine salt
1/4 teaspoon ground cinnamon
1 cup buttermilk, at room temperature
1 large egg, at room temperature
1 teaspoon pure vanilla extract
Vegetable oil cooking spray
2 tablespoons cherry preserves
Confectioners' sugar, for dusting

Steps:

  • Stir the almond butter and almond extract together in a small bowl. Put a baking sheet and a piece of foil next to the stove.
  • Heat a griddle or a large nonstick skillet over medium-high heat. Whisk together the flour, sugar, baking soda, salt, cinnamon, buttermilk, egg and vanilla extract in a large bowl until smooth.
  • Spray the griddle lightly with cooking spray. Working in batches, use a small scoop or ladle to drop 2 tablespoons of batter per pancake onto the griddle, being careful not to crowd the pan. Cook the pancakes until they are golden brown on each side, 1 to 2 minutes per side. Transfer each batch to the baking sheet and tent with foil while you cook the remaining batter.
  • To serve, spread 1 tablespoon of the almond butter mixture on half of the pancakes. Spoon 1 teaspoon of the cherry preserves onto the remaining pancakes and flip them onto the pancakes with almond butter to make sandwiches. Dust the sandwiches with confectioners' sugar, and serve.

Whole Wheat Buttermilk Silver Dollar Pancakes image

Tiny, tasty whole wheat buttermilk pancakes sure to satisfy any appetite, small or large.

Provided by Kare for Kitchen Treaty

Time 20m

Number Of Ingredients 11

3/4 cup whole wheat flour
3/4 cup all-purpose flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon nutmeg or more to taste (optional)
1 1/2 cups buttermilk
2 eggs
3 tablespoons unsalted butter (melted and cooled slightly)
1 teaspoon vanilla

Steps:

  • In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, and nutmeg if using.
  • In a medium bowl, whisk together the buttermilk, eggs, butter, and vanilla, beating until well-blended.
  • Pour the wet ingredients over the dry ingredients and whisk just until incorporated.
  • Heat a non-stick griddle to 350 degrees, or place a large non-stick frying pan over medium heat. Add a little butter, if desired, and scoop scant tablespoonfuls over the hot griddle/pan. Cook until the pancakes begin to look a little dry around the edges and start to form bubbles, about 1 minutes. Flip and cook for another minute until golden brown on both sides.
  • Serve with butter and maple syrup.

Tips:

  • Use a non-stick skillet or griddle over medium heat to prevent the pancakes from sticking.
  • Pour ¼ cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes per side, or until golden brown.
  • Flip the pancakes carefully to avoid breaking them. A thin spatula is best for this.
  • Serve the pancakes immediately with your favorite toppings, such as butter, syrup, fruit, or whipped cream.
  • For thicker pancakes, use a thicker batter. For thinner pancakes, use a thinner batter.
  • If the pancakes are browning too quickly, reduce the heat.
  • If the pancakes are not cooking through, increase the heat.
  • Gluten-free pancake mix can be used to make these pancakes even easier to prepare.
  • These pancakes can also be made ahead of time and reheated in the microwave or toaster.

Conclusion:

These gluten-free silver dollar pancakes are a delicious and easy-to-make breakfast option. They are perfect for a quick and easy weekday breakfast or a special weekend brunch. With their fluffy texture and golden brown color, these pancakes are sure to be a hit with everyone at your table.
