VERY BASIC FRUIT SALAD



Very Basic Fruit Salad image

I love how simple and refreshing this is and the ability to adjust the recipe for the types of fruits which are fresh in your local area. Allow at least 4 hours for chilling before serving. From TOH Cookbook. I like changing out the cantaloupe with fresh pineapple and/or grapefruit slices (which sometimes means a bit of sugar added to balance the tartness), or I have added blueberries also just as a topping.

2 cups fresh strawberries, sliced
2 cups green seedless grapes, halved
1 small cantaloupe, cut into chunks
2 firm bananas, sliced
1/3 cup fresh orange juice (100% orange juice)

Steps:

  • In a large bowl, combine the fruit.
  • Pour the juice over the fruit and toss to coat.
  • Cover and refrigerate for 4 hours and then stir just before serving.

2 cups watermelon, seeded and cut into bite-size pieces
2 cups cantaloupe, cut into bite-size pieces
2 cups fresh pineapple chunks
2 cups strawberries, hulled and halved if large
2 cups fresh peaches - peeled, pitted, and cut into bite-size pieces
1 cup seedless grapes
1 cup kiwi fruit, peeled and cut into bite-size pieces
¼ cup cold water
¼ cup frozen orange juice concentrate, thawed
¼ cup frozen limeade concentrate, thawed
¼ cup frozen lemonade concentrate, thawed
1 cup toasted pecans
12 lettuce leaves

Steps:

  • In a large salad bowl, gently toss together the watermelon, cantaloupe, pineapple, strawberries, peaches, grapes, and kiwi until thoroughly combined.
  • Combine the water and orange juice, limeade, and lemonade concentrates in a small bowl. Pour the dressing over the fruit salad. Gently toss, and sprinkle the salad with toasted pecans. Serve salad scooped on lettuce leaves.

This salad is tastier the longer you can let it soak in its juices. I prefer 3 to 4 hours in the refrigerator before I serve it. Enjoy.

⅔ cup fresh orange juice
⅓ cup fresh lemon juice
⅓ cup packed brown sugar
½ teaspoon grated orange zest
½ teaspoon grated lemon zest
1 teaspoon vanilla extract
2 cups cubed fresh pineapple
2 cups strawberries, hulled and sliced
3 kiwi fruit, peeled and sliced
3 bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes

Steps:

  • Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
  • Layer the fruit in a large, clear glass bowl in this order: pineapple, strawberries, kiwi fruit, bananas, oranges, grapes, and blueberries. Pour the cooled sauce over the fruit. Cover and refrigerate for 3 to 4 hours before serving.

I was looking for a light meal for brunch and decided to toss every type of fruit I had in the house into a yogurt-based salad for lunch. It went over well with my lunch guest who is a fussy eater. My sister actually asked for seconds. The nice thing about this is you make what you need at the time and don't have to bother with leftovers. However, it does keep well for a few days as long as it is refrigerated. Serve in individual dishes with crackers.

1 kiwi fruit, peeled and sliced 1/4-inch slices
1 banana, sliced, 1/4-inch slice
12 green seedless grapes
1 (10 ounce) can mandarin oranges, drained, reserve juice
1 red plum, cut in 1/2-inch wedges cut wedges in half
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
1 lime

Steps:

  • Prepare and mix all the fruit in a bowl.
  • Measure 1/4 cup of the reserved Mandarin orange juice, squeeze in the juice of the lime (apprx 2 tbsp) & stir in the sugar (splenda).

This is one of those "I feel silly posting this" sort of recipes, but I know I get inspiration from others that way, and this truly is very good. As written, this is a beautiful mix of colors and flavors, but you can definitely put in your own seasonal favorites, and it will turn out great. I like this just as it is, or else topped with plain yogurt and/or nuts. The gelatin is optional - I just put it in my fruit salads because I don't like how some of them get juicy after awhile. If this doesn't bother you, you can leave it out.

1 peach, chopped
1 nectarine, chopped
