MEXICAN COLESLAW

Mexican Coleslaw image

I took the recipe from Cooking Light and tweaked it a little. The first time I made it by the recipe it was too tart and not spicy enough so the following is what I finally came up with.

Categories     Vegetable

Time 15m

Yield 8 serving(s)

Number Of Ingredients 8

1/2 head cabbage, thinly sliced
1 large maui onion, thinly sliced
1/2 bunch cilantro, chopped
1/3 cup lime juice
5 teaspoons light extra virgin olive oil
3/4 teaspoon sea salt
1 tablespoon sugar or 1 tablespoon sugar substitute
4 jalapenos, seeded and thinly sliced

Steps:

  • Combine the cabbage, onion, cilantro and jalapeños in a salad bowl and set aside.
  • Combine the lime juice, olive oil, sea salt and sugar and whisk until the sugar and salt are dissolved, then pour over the cabbage mixture and serve immediately.
  • I do not like this dish as a leftover, it loses it's crispness and clean taste.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage and carrots for a more even and consistent texture in your coleslaw.
  • For a creamier coleslaw, use a mayonnaise-based dressing. For a lighter and tangier coleslaw, use a vinegar-based dressing.
  • Add a variety of vegetables to your coleslaw for extra flavor and texture. Some good options include bell peppers, onions, radishes, and jicama.
  • If you're using a mayonnaise-based dressing, be sure to chill the coleslaw for at least 30 minutes before serving. This will help the flavors to meld and develop.
  • Serve coleslaw as a side dish with grilled meats, fish, or tacos. It's also a great topping for burgers and hot dogs.

Conclusion:

Mexican coleslaw is a delicious and versatile dish that can be enjoyed in many different ways. With its bright flavors and crunchy texture, it's a perfect addition to any Mexican-inspired meal. So next time you're looking for a refreshing and flavorful side dish, give Mexican coleslaw a try. You won't be disappointed!
