1 large onion, chopped
2 jalapeno peppers, seeded and minced
2 cloves garlic, crushed
1 teaspoon ground turmeric
½ teaspoon ground cinnamon
2 cups uncooked long-grain white rice
2 (14.5 ounce) cans chicken broth
1 cup water
1 bay leaf
2 green onions, chopped

Steps:

  • Heat oil in large, heavy pan over medium heat. Stir in onion, jalapeno peppers and garlic. Saute until onion is translucent; about 8 minutes.
  • Stir turmeric, cinnamon, and rice into the pan; stir for 2 minutes. Mix in the chicken broth, water and bay leaf. Bring the mixture to a boil, reduce heat to low, cover and cook 20 minutes.
  • Turn off the heat altogether and let sit for 5 minutes. Garnish with chopped green onion.

Steps:

  • In a sauce pan combine oil, onion and green pepper. Saute over medium heat until vegetables are tender. Sprinkle in cayenne pepper. Add heated chicken stock and tomatoes. Bring to a boil. Add rice and stir. Cover and reduce to a simmer. Continue simmering over low heat until all liquid is absorbed. Serve hot.

2 cups salt water, boiling
1 piece fresh ginger, 1-inch long, peeled
1/4 cup seedless raisin
1/4 cup currants
2 ounces dried apricots, chopped
pepper
1/2 teaspoon nutmeg, ground
2 teaspoons shallots, minced
1 tablespoon lemon juice
1/2 teaspoon coriander
1 tablespoon olive oil
1/2 cup pine nuts, toasted

Steps:

  • Cook rice with peeled ginger, in boiling salted water until done, about 25 minutes. While rice is cooking, soak the raisins, currants and chopped apricots in hot water to cover, then drain when plump.
  • When rice is ready, remove ginger and place rice in a warm serving casserole. To the rice in the casserole, add pepper, nutmeg, shallots, lemon juice, coriander, and olive oil. Gently fold in the plumped raisins, currants and apricots. Keep warm until ready to serve. Just before serving, sprinkle with pine nuts.

  • Wash rice in several changes of tap water
  • Pour 2 pints of water over rice and soak for half an hour. Drain in a sieve for 20 mins. This will remove the excess starch & help achieve fluffy rice

1 large onion , finely sliced
1 bay leaf
3 cardamom pods
small cinnamon stick
25g butter
1 tsp turmeric
100ml hot curry paste
300g basmati rice (washed 3 times)
handful raisin
1l chicken stock
25g flaked almonds , toasted
big handful chopped coriander

Steps:

  • Fry the onions, bay and whole spices in the butter for 10 mins. Sprinkle in the turmeric, then add the curry paste and cook until aromatic. Add the rice and the raisins, stir and cook for a good few mins, then add the stock and bring to the boil. Cover with a tight-fitting lid and when really boiling lower the heat and cook for 10 mins. Turn the heat off but don't lift the lid and leave to sit for 20 mins.
  • Stir in half the almonds and coriander, with the rest of the coriander and the almonds thrown over the top.

1-1/4 cups water
3/4 cup chopped sweet onion
1-1/2 teaspoons olive oil
