This meatloaf is a bit too dry for my taste. I think I'll add some extra moisture next time, like a cup of beef broth.

I'm not a big fan of jalapeños, but I still enjoyed this meatloaf. The smokiness of the cheddar cheese helped to balance out the spiciness of the jalapeños.

This meatloaf was a little too spicy for my taste, but my husband loved it. I'll definitely make it again, but I'll use less jalapeños next time.
