SIMPLY OVEN BAKED PORK CHOPS AND RICE
This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

BAKED PORK CHOPS AND RICE
Growing up, this was a staple in my home. This is a great recipe because the pork and rice cook in the same dish. The rice is flavorful and the pork chops come out nice and tender.

SIMPLY OVEN BAKED PORK CHOPS OR CHICKEN AND RICE II
This is an updated version of DH's bachelor days recipe, that I posted in 2005. When I first met him, the only spices he owned was Tony's, garlic salt and salt and pepper. This is the recipe that has evolved from the original. It's still a basic recipe...just a lot more flavor. As with all my recipes, feel free to change it up to suit your family's tastes. Note: You can season the rice with salt and pepper. We do it at the table.

Tips:
- For the best results, use a thick boneless pork chop or chicken breast. This will help ensure that the meat stays juicy and tender while cooking.
- Be sure to season the pork chops or chicken generously with salt, pepper, and garlic powder. This will help enhance the flavor of the meat.
- If you don't have a baking dish, you can use a large skillet instead. Just be sure to cover the skillet tightly with aluminum foil to prevent the meat from drying out.
- Check the internal temperature of the pork chops or chicken before removing it from the oven. The meat should reach an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) for pork and 165 degrees Fahrenheit (74 degrees Celsius) for chicken.
- Let the pork chops or chicken rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful dish.
Conclusion:
This simple oven-baked pork chops or chicken and rice dish is a great weeknight meal. It's easy to make and can be customized to your liking. You can add different vegetables to the rice, such as broccoli, carrots, or peas. You can also use different seasonings on the pork chops or chicken, such as rosemary, thyme, or oregano. Serve with a side of your favorite vegetables and you have a complete and satisfying meal.
