Easy Microwave Chocolate Cake image

This is a quick and easy chocolate cake you can cook in the microwave in 2 minutes. And it tastes great. Really! The consistency is dense and cakey. It would go well with chocolate (or your favorite) chips, nuts, or served warm with hot fudge. This cake, 'born' out of a pregnancy craving, worked out amazingly!

Time 8m

Yield 2

Number Of Ingredients 9

3 tablespoons butter, softened
¼ cup white sugar
1 egg
1 teaspoon vanilla extract
¼ cup milk
½ cup all-purpose flour
2 tablespoons cocoa powder
¼ teaspoon baking powder
1 pinch salt

Steps:

  • Spray a medium microwave-safe bowl with non-stick spray and set aside. In a mixing bowl, combine the butter, sugar, egg, vanilla extract, and milk; blend together. Combine the flour, cocoa powder, baking powder and salt; blend into the mixture until smooth. Pour into greased bowl.
  • Cover and cook in the microwave on high for 2 to 2 1/2 minutes, or until cake springs back when touched. Since all microwaves cook differently, adjust the cooking time to accommodate your machine. To serve, let the cake cool five minutes, then cover the bowl with a plate and turn both bowl and plate upside down so the cake falls onto the plate.

Time 4m

Yield 1 cake, 1 serving(s)

Number Of Ingredients 6

1 tablespoon milk (at room temperature)
1 tablespoon unsalted butter (at room temperature)
1 1/4 tablespoons sugar
1 3/4 tablespoons all-purpose flour
1/2 teaspoon cocoa powder
1 pinch baking soda

Steps:

  • Mix bilk, butter, and sugar in a small microwave safe bowl.
  • Add flour, cocoa and baking soda to the bowl. Mix so that there are no lumps.
  • Microwave on high for 1 - 1:30 minutes (depends on the microwave- mine comes out in 1 minute). The cake will spring back on touch when done.
  • Let stand for couple of seconds.
  • Serve with chocolate sauce or just plain ice-cream. Enjoy.

Tips:

  • Use a microwave-safe mug or ramekin with a capacity of at least 8 ounces.
  • Do not fill the mug or ramekin more than halfway, as the cake will rise during cooking.
  • If you are using a chocolate chip cookie mix, be sure to use one that does not contain nuts or other large chunks, as these can cause the cake to cook unevenly.
  • If you are using a gluten-free flour blend, be sure to use one that contains xanthan gum, as this will help the cake to rise properly.
  • If you do not have a microwave, you can also bake the cake in a preheated oven at 350 degrees Fahrenheit for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

Conclusion:

Microwave mug cakes are a quick and easy way to satisfy your sweet tooth. With a few simple ingredients and a microwave, you can have a delicious, single-serving cake in just a few minutes. So next time you're craving something sweet, give one of these recipes a try!
