REFRIGERATOR DILL PICKLES

Refrigerator Dill Pickles image

Using only a handful of pantry ingredients, a Mason jar, and a few hours in the refrigerator, you can make classic dill pickles that are just as tangy and flavorful as those prepared according to more traditional (and labor-intensive) canning techniques. Plus this recipe can be scaled with ease, meaning you can make just one jar or ten in a matter of minutes. So if you're a pickle lover but short on time, this method is for you.

Provided by Food Network Kitchen

Time 1h10m

Yield 1 quart

Number Of Ingredients 7

1 cup rice wine vinegar or distilled white vinegar
Kosher salt
1 teaspoon whole black peppercorns
1/4 teaspoon crushed red pepper flakes
6 sprigs dill
3 cloves garlic
1 1/4 pounds kirby cucumbers, ends trimmed (about 4 medium cucumbers; see Cook's Note)

Steps:

  • Bring the vinegar, 1 1/2 cups water and 1 tablespoon salt to a boil in a small saucepan over medium heat, stirring until the salt is dissolved, about 3 minutes. Remove from the heat.
  • Meanwhile, place the peppercorns, red pepper flakes, dill and garlic in a 1-quart Mason (or other glass) jar. Pack the cucumbers in the jar as tightly as possible.
  • Pour the vinegar mixture over the cucumbers so the cucumbers are completely submerged. Leave uncovered and allow to cool to room temperature, about 1 hour. Cover and refrigerate for at least 1 day before using. The pickles will keep in the refrigerator for up to 2 weeks.

Time P7DT15m

Yield 4 pint jars, 16 serving(s)

Number Of Ingredients 12

1 1/2 lbs small pickling cucumbers, sliced 1/4-1/2-inch thick (or regular cucumbers-may cut into spears also)
4 garlic cloves, sliced
4 sprigs fresh dill (optional)
2 cups cold water
1/2 teaspoon celery seed
3 tablespoons kosher salt
1 tablespoon dill seed
2 cups white distilled vinegar
1 cup sugar (or 1 1/2 cups depending on sweetness you desire)
1 tablespoon mustard seeds
1 teaspoon red pepper flakes (more or less depending on heat level you desire)
1 teaspoon whole black peppercorn (optional)

Steps:

  • Evenly divide the garlic, fresh dill and sliced cucumbers among four wide mouthed pint jars.
  • Before adding the mustard seed, red pepper flakes, peppercorns(if using) and dill seed, crush them slightly. You can use your hands, a mortar and pestle, or give then one quick whiz in the food processor(optional).
  • In a saucepan, mix together vinegar, water, sugar, red pepper flakes, celery seed, salt, mustard seed and dill seed. Heat to just dissolve sugar, then remove and let cool. Use a funnel to fill each jar with the cooled brining liquid. The spices may float to the bottom, so use a spoon to evenly divide anything that is leftover into the jars. Cap tightly and refrigerate at least one week before eating. Enjoy!
  • It was suggested you do this over a large bowl. The cucumbers start to float and displace liquid. Add the overflow back into the brining mixture before you fill up the next jar. No mess! :).

Tips:

  • Use fresh, unwilted cucumbers for the best flavor and texture.
  • Cut the cucumbers into uniform pieces so that they pickle evenly.
  • Brine the cucumbers for at least 24 hours before eating them, but they will continue to improve in flavor for up to 2 weeks.
  • Store the pickles in a cool, dark place for up to 2 months.
  • Serve chilled or at room temperature.
  • Garnish with fresh dill or other herbs before serving.
  • Use different types of vinegar, such as apple cider vinegar or white vinegar, to create different flavor profiles.
  • Add other vegetables or fruits to the pickles, such as onions, carrots, or peppers.
  • Use a variety of spices and herbs to create unique flavor combinations.
  • Experiment with different techniques, such as hot pickling or fermenting, to create different types of pickles.

Conclusion:

Refrigerator pickles are a delicious, refreshing, and easy-to-make snack or side dish. They are a great way to use up fresh cucumbers and can be made with a variety of different flavors and ingredients. With a little planning and experimentation, you can create your own signature pickle recipe that will be enjoyed by family and friends alike.
