This is a favorite dish in my family, it's so easy to make and tastes great! My mom couldn't think of a good name for the casserole so she asked my brother and I for help coming up with the name. We named it 'Pig Slop' and as gross as the name sounds, it just works. You can call it Bean Casserole if the original name grosses you out! My mom would always serve this dish with cornbread, either on the side or she'd put the Pig Slop over the cornbread.

1 (16 ounce) package kielbasa sausage, cut into half moons
1 (28 ounce) can baked beans (such as Bush's Original®)
1 (15.5 ounce) can chili beans, drained
1 (15.25 ounce) can corn kernels, drained
½ red bell pepper, chopped
½ onion, chopped
1 teaspoon chili powder
1 (8 ounce) package shredded sharp Cheddar cheese

1 (15 ounce) can pork and beans (I use Van Camp's)
1 large russet potato, boiled and cubed to bite size pieces
1/4 cup barbecue sauce (more or less if desired)
1/4 cup ketchup (more or less if desired)

Steps:

  • Preheat oven to 350 degrees.
  • Brown beef in a large skillet and drain.
  • Add Beans, Potatoes, BBQ Sauce, and Ketchup and toss until meat is evenly coated.
  • Place mixture in a baking dish, and bake until heated through (about 10-15 Minutes).
  • You can serve on hamburger buns, as a dip with frito's or as is!

1 lb ground beef
5 potatoes, peeled and sliced 1/2-inch

Bob Evan's restaurants makes this on their breakfast menu (they call it country Biscuit Breakfast), but I took one look at it, and said to my husband they should call it "Breakfast Slop" instead. Despite the not too encouraging name, this is really good, and one of the better things you can have for breakfast at Evans. You'll like this a lot if you are a fan of biscuits and gravy, because this basically is the magnum opus of that sort of thing. At Evans they serve this with home fries (hash browns) and that or something like grits would be just great. Enjoy!

4 large biscuits (refrigerated type or home made)
1 lb bulk breakfast sausage
4 large eggs
1 cup shredded cheddar cheese
2 1/2 cups milk
4 tablespoons flour
4 tablespoons unsalted butter
1 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Prepare biscuits if not already made.
  • Brown sausage in a large skillet, crumbling it as it cooks and draining any fat.
  • Melt butter in a different large skillet and stir in flour.
  • Cook flour, stirring, over low heat until it just starts to change color (it doesn't need to get dark/coffee brown).
  • Whisk in milk, salt and pepper and continue stirring until mixture thickens to your liking.

Ha Ha!! NOT FOR THE DIET CONCIOUS!!! This comes from when I was a restaurant supervisor at Cadillac Jack's Diner/Casino in Deadwood, SD. The poker player guys that stayed at the casino for hours, even days on end would order breakfast and sometimes couldn't make up their minds between having an omlette and hashbrowns or biscuits and gravy with eggs and bacon/sausage so this is what one of the brilliant cooks came up with!! It never was on the menu (should of been!!) and now no one is there that knows how to make it. But the legend lives on.....

1/3 cup chopped onion
1/3 cup chopped green pepper
