1 tablespoon vegetable oil
2 lbs lean ground beef
1 onion, minced
1/2 cup minced green bell pepper
2 garlic cloves, minced
1/2 teaspoon dried thyme
1/8 teaspoon cayenne pepper
1/2 cup ketchup
2 cups tomato sauce
2 cups water
4 cups beef stock
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 tablespoon brown sugar
salt and pepper, to taste

Steps:

  • Set a large soup pot over medium-high heat. Add vegetable oil and beef; cook, stirring occasionally, until meat is browned and cooked through, about 10 minutes.
  • Remove meat from pot and set aside. Drain all but 2 tablespoons of grease from pot and discard.
  • Add onion and green bell pepper; cook until softened, 8-10 minutes. Add garlic, thyme and cayenne pepper; cook just until fragrant, about 30 seconds.
  • Add ketchup and cook, stirring, until it darkens in color, about 1 minute. Add tomato sauce, water, beef stock, Worcestershire sauce, apple cider vinegar and brown sugar.
  • Sir well. Reduce heat to medium; add reserved ground beef. Simmer partially covered 15 minutes.
  • Season to taste with salt and pepper. Serve with corn chips or toasted garlic bread.

This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

1 8-ounce can tomato sauce
1/2 cup ketchup
1 1/2 tablespoons Worcestershire sauce
1 teaspoon prepared yellow mustard
1/2 teaspoon dry mustard
1 teaspoon molasses
1 garlic clove, finely minced
1/4 teaspoon orange zest
Pinch of ground cloves
Hot sauce to taste
1 pound ground beef
1/2 small onion, finely chopped
6 whole-wheat hamburger buns, toasted if desired

Steps:

  • In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
  • Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
  • Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

1 medium onion, finely chopped
1/2 green bell pepper, finely chopped
1 celery stalk, finely chopped
2 cloves garlic, minced
Coarse salt and ground pepper
1 pound ground beef
1 can (15 ounces) tomato sauce
1/4 cup ketchup
1 tablespoon Worcestershire sauce

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, and garlic; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes.

2 tablespoons ketchup

This recipe is from my 1970 and 1976 Campbell Soup Cookbook (Cooking with Soup). The added ingredient that makes these sloppy joes taste good, is the chili powder (providing you add 1-1/2 teaspoons). I like mine topped with a bit of shredded sharp cheddar cheese.

1 lb ground beef
1 cup diced onion (I only added 3/4 cup)
1 cup thinly sliced celery (I only added 1/2 cup)
1 tablespoon shortening
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 teaspoon chili powder (I added 1-1/2 teaspoons)
1 (10 3/4 ounce) can condensed tomato soup
5 -6 hamburger buns
shredded cheddar cheese (optional)

Steps:

  • In a large skillet, brown the ground beef, onion, and celery, in the shortening.
  • (I used 85% ground chuck for this recipe, so I didn't have to add any shortening, when cooking the beef and vegetables).
  • Drain off the excess grease.
  • Season the cooked beef and vegetables, with the spices.
  • Stir in the tomato soup.
  • Cover skillet, and simmer to blend flavors.
  • (I simmered mine for for 30 minutes; stirring frequently.).
  • Serve sloppy joes on hamburger buns topped with some shredded cheddar cheese, if desired.
  • Note: I thought the sloppy joes tasted even better reheated the next day. You could really taste the chili powder in the sloppy joes a bit more.

Steps:

  • In 10-inch nonstick skillet, cook beef, celery and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Reduce heat to medium. Stir in salt, soup and mustard. Cook 10 to 15 minutes longer, stirring occasionally, until mixture is bubbly and vegetables are tender. Spoon mixture into buns.
