SLOW COOKED GOOSE

A very delicious goose dish. Good with tame and wild goose meat, as it will remove the wild-game taste. Great recipe that can cook all day while you're at work. When finished it makes an excellent gravy that is great with mashed potatoes. Also, my wife and kids couldn't stand the taste of goose until I made this recipe, now they love it.

Tips:

  • Choose the Right Goose: Opt for a young and tender goose weighing around 12-14 pounds. Ensure that the goose is well-plucked and cleaned.
  • Prepare the Goose: Remove any excess fat from the goose cavity and pat it dry. Season the goose inside and out with salt, pepper, and herbs of your choice.
  • Stuff the Goose (Optional): Stuffing adds flavor and moisture to the goose. Use a combination of bread crumbs, vegetables, fruits, nuts, and herbs. Do not overstuff the goose as it may hinder even cooking.
  • Roast the Goose: Place the goose breast-side up on a roasting rack in a roasting pan. Add water or broth to the bottom of the pan to prevent the drippings from burning. Roast the goose at a low temperature (325°F) for several hours, basting it occasionally with its own drippings.
  • Check the Temperature: Use a meat thermometer to check the internal temperature of the goose. The goose is done when the internal temperature reaches 165°F in the thickest part of the thigh.
  • Let the Goose Rest: Once the goose is cooked, remove it from the oven and let it rest for at least 15 minutes before carving. This allows the juices to redistribute, resulting in more tender and flavorful meat.

Conclusion:

Slow-cooked goose is a traditional and delicious dish that can be enjoyed during special occasions or as a comforting meal. With careful preparation, seasoning, and slow roasting, you can achieve a succulent and flavorful goose that is sure to impress your family and friends. Remember to choose a high-quality goose, season it well, stuff it if desired, and roast it at a low temperature for several hours. Basting the goose occasionally with its own drippings will enhance its flavor and prevent it from drying out. Once the goose is cooked, let it rest before carving to ensure tender and juicy meat. Enjoy your slow-cooked goose with your favorite sides and condiments!
