500g pork fillet, sliced into medallions
1 medium onion , finely chopped
3 eating apples
150ml low-salt chicken stock
1 tbsp Dijon mustard
4 sage leaves , finely sliced
2 tbsp half-fat crème fraîche

Steps:

  • Heat the slow cooker. Heat the oil in a large frying pan, fry the pork medallions on each side for 2 mins until they pick up a little colour. Fry the onion for a few mins, then add the stock and mustard to the pan and stir. Tip the pork and sauce into the slow cooker.
  • Core and cut the apples into quarters, add them to the pot with the sage. Season with black pepper. Cook on Low for 4 hours or until the meat is tender, then stir in the crème fraîche.

6 apples with peel, cored and cut into 8 wedges
1 large red onion, roughly chopped
¼ teaspoon ground cinnamon, or to taste
7 pounds pork shoulder roast
½ teaspoon salt, or to taste

1 quart sauerkraut

Everyone knows that pork and applesauce go together. I threw this one into the slow cooker for hubby and the kids one day when I was running late for work and I had fresh apples. It makes it's own apple sauce in the slow cooker.

4 apples, sliced I used gala
1 onion, sliced
2 lbs boneless pork roast or 2 lbs boneless pork chops
italiano seasoning, to taste
garlic powder, to taste
onion powder, to taste
1/4 cup apple juice
6 ounces chicken-flavored ramen noodles, cooked, drained and mixed with seasoning packets (2 packs)

Steps:

  • Slice apples and lay them on the bottom of the slow cooker, slice onion and lay half of them on top of the apples.
  • Season roast with Italiano Seasoning, garlic powder, and onion powder, and it you want to add salt and pepper. Lay on top of the apples, and top with the remaining onions.
  • Pour apple juice down the side of the slow cooker so you don't rinse off all the seasoning.
  • Cook on High for 4 hours.
  • When ready to serve, boil or ramen noodles in just water, drain, and toss with some butter and the seasoning packets.
  • Serve pork with the apples and noodles.
  • This is a basic last minute chuck into the slow cooker and run because your late recipe. If you want to add different seasonings then experiment. I really didn't know how it would taste until I got home 9 hours later. Hubby told me I have to make it more often.

2-2.25kg/4lb 8oz-5lb pork shoulder joint (or 2 x 1kg/2lb 4oz joints), scored and tied
50g butter , softened
3 tbsp demerara sugar
3 tbsp wholegrain mustard
3 onions, thinly sliced, and 2 small eating apples (we used Braeburns), quartered, cored and thinly sliced
7-8 red, yellow and/or orange peppers , each cut into quarters, cores and seeds discarded
few bay leaves
3 tbsp cider vinegar
3 tbsp olive oil
2 tbsp wholegrain mustard
2 tbsp demerara sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Sit the pork on a sheet of foil in a roasting tin. Mix the butter, sugar and mustard with 2 tsp salt, rub all over the top and ends of the joint (or joints), then scrunch up the foil to seal tightly in a parcel.
  • Mix the onions and apples in a large, shallow roasting tin. Scatter the peppers over the top and poke in some bay leaves. Mix the vinegar, oil, mustard and sugar with 100ml water and drizzle over everything. Roast the pork for 3½ hrs while you cook the peppers on the shelf below for the first 2 hrs. When you remove the apples and peppers after 2 hrs, set aside and put the Salt-baked potatoes (see 'Goes well with', right) into the oven underneath the pork instead.
  • After 3 hrs, unwrap the foil from the pork. Scrape any mustard mixture stuck to the foil back onto the pork, sit it and any juices back in the tin and increase oven to 200C/180C fan/gas 6. Roast for 30-45 mins more until the skin is brown and crisping. Remove the pork from the oven, cover and rest for 20 mins while you put the peppers back on the top shelf for 20 mins to finish. Serve the pork thickly sliced alongside the apples and peppers, with any tin juices poured over.
