This is one of my favorite soups and it always gets rave reviews! Salad, hard rolls and wine make a meal! You can make this 24 hours ahead of time without the noodles and wait to add the spinach noodles until soup is reheated for serving. Yummy! Serve topped with grated Parmesan!

SLOW COOKER VEGETABLE SOUP

Slow Cooker Vegetable Soup image

This soup is a traditional vegetable soup with a little extra. I added homemade dumplings like my mom use to make for me. She made her soup with all the leftover vegetables in the refrigerator and then added dumplings. Good vegetarian soup without the meat.

Tips:

  • Use high-quality ingredients: Fresh vegetables, flavorful sausage, and a rich broth make all the difference in this soup. Look for the best quality ingredients you can find.
  • Don't overcrowd the slow cooker: The vegetables and sausage need room to cook evenly. If you overcrowd the slow cooker, the soup will be watery and bland.
  • Cook on low for the best flavor: Slow cooking allows the flavors to meld and develop. Cook the soup on low for at least 6 hours, or up to 8 hours for even more flavor.
  • Add the pasta at the end: Pasta cooks quickly, so add it to the soup during the last 30 minutes of cooking. This will prevent it from becoming overcooked and mushy.
  • Serve with a sprinkle of Parmesan cheese: Parmesan cheese adds a delicious salty and nutty flavor to the soup. Serve it with a sprinkle of Parmesan cheese on top.

Conclusion:

This slow cooker Italian sausage vegetable soup is an easy and delicious meal that the whole family will love. It's perfect for a busy weeknight dinner or a lazy weekend lunch. With just a few simple ingredients and a little time, you can have a hearty and flavorful soup that will warm you up from the inside out.
