1 tablespoon ginger, minced
½ teaspoon red pepper flakes
½ teaspoon black pepper
4 skins on chicken breast, cut in half
2 cups baby carrot
1 red bell pepper, thinly sliced
2 cups broccoli floret
salt, to taste

Steps:

  • In a medium bowl, mix together the soy sauce, honey, garlic, ginger, red pepper, and black pepper.
  • Place the chicken breasts directly on the bottom of the slow cooker, sprinkle with a bit of salt, and pour on the honey sauce.
  • Cook the chicken for 1½ hours on high.
  • Toss in the carrots, broccoli, and bell peppers. Using tongs, mix the chicken and veggies around the slow cooker so that everything is mixed and coated with the honey sauce.

2 tablespoons minced peeled fresh ginger (from a 1-inch piece)
1 tablespoon rice wine vinegar
2 tablespoons light brown sugar
1 teaspoon toasted sesame oil
Freshly ground black pepper
2 tablespoons cornstarch
Chopped scallions, toasted sesame seeds and cooked white rice, for serving

Steps:

  • Place the chicken thighs in an even layer in the slow cooker.
  • Whisk together the honey, soy sauce, crushed red pepper, garlic, ginger, vinegar, brown sugar, sesame oil and a few good grinds of black pepper in a large glass measuring cup or a medium bowl until combined.   • Turn the slow cooker up to high. Whisk together the cornstarch and 2 tablespoons cold water in a small bowl to make a slurry, then mix the slurry into the sauce until combined. Submerging the sauce in the sauce as much as possible. Cover and cook on high until the sauce is thickened to the consistency of a glaze, about 30 minutes.

6 cloves garlic, finely chopped
1 tablespoon butter, melted
1/2 teaspoon salt
2 lb red potatoes, cut into 3/4-inch pieces
1 package (2 lb) chicken legs (about 6)
1 lime, cut into wedges
2 green onions, thinly sliced
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Spray 5-quart slow cooker with cooking spray. In large bowl, mix honey, taco seasoning mix, garlic, melted butter and salt. Add potatoes, and toss to coat. Using slotted spoon, transfer potatoes to slow cooker. Add chicken to bowl with honey mixture; toss to coat. Arrange chicken on top of potatoes in slow cooker. Pour any remaining liquid over chicken.
  • Cover; cook on High heat setting 3 to 4 hours or until potatoes are tender and instant-read thermometer inserted in thickest part of chicken, without touching bone, reads at least 165°F. Do not uncover slow cooker before 3 hours.
  • Line large rimmed baking pan with foil. Position oven rack 4 inches from broiling element. Set oven control to broil. Transfer chicken to pan. With slotted spoon, transfer potatoes to serving platter; cover with foil. Pour 1/4 cup of liquid from slow cooker over chicken. Broil 2 to 4 minutes or until chicken skin is golden brown and crisp. Turn chicken; pour another 1/4 cup liquid from slow cooker over chicken. Discard remaining liquid from slow cooker. Broil 2 to 4 minutes longer or until skin is golden brown and crisp on second side.
  • Serve broiled chicken with sauce from pan, potatoes and lime wedges. Top with green onions and cilantro.

¾ cup honey
¾ cup lite soy sauce

There isnt going to be enough heat in the slow cooker to thicken the sauce unless you add enough corn starch to ruin the taste and turn it into dry putty. When ready, I shredded the chicken. My guests were picking away at the chicken, anxious for the final product. Then I began the thickening process. Ugh. The cornstarch mixture did not thicken my sauce. So I browsed the comment section and saw a few others encountered this issue and that it was recommended to add more corn starch to thicken it. Thicken the sauce, it did not. It instead added a horrible floury coating to the chicken, one that ruined the entire meal. I had to toss the entire meal out and order my guests pizza.
