Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 6

1 pound mixed small Yukon Gold and red new potatoes, scrubbed
Kosher salt and freshly ground black pepper
3 tablespoons good olive oil
1/2 cup freshly grated Parmesan cheese
2 tablespoons minced fresh chives
Fleur de sel or sea salt

Steps:

  • Preheat the oven to 400 degrees.
  • Place the potatoes and 1 tablespoon salt in a large saucepan and add enough water to cover the potatoes. Bring to a boil, reduce the heat, and simmer for 17 to 20 minutes, until the potatoes are tender when pierced with a skewer. Drain the potatoes and place on a sheet pan. With a potato masher or metal measuring cup, press each potato until it's about 1/2 inch thick (they will be messy). Toss the potatoes with the olive oil, 1 teaspoon salt, and 3/4 teaspoon pepper.
  • Roast the potatoes for 25 to 30 minutes, turning once, until the skins have become nicely browned. Sprinkle the potatoes with the Parmesan cheese and roast for another 2 to 3 minutes, just until the cheese melts. Sprinkle the potatoes with the chives and fleur de sel and serve hot.

Tips:

  • Use starchy potatoes: Yukon Gold, Russet, or Idaho potatoes are best for smashing, as they have a high starch content that helps them hold their shape and become crispy when roasted.
  • Don't overcrowd the pan: When roasting the potatoes, make sure to spread them out in a single layer on the baking sheet. If they are too crowded, they will not cook evenly and will become soggy.
  • Season the potatoes well: Before roasting, toss the potatoes with olive oil, garlic powder, onion powder, paprika, and salt and pepper. This will help to enhance their flavor.
  • Smash the potatoes twice: For the best results, smash the potatoes twice. The first time, smash them lightly with a fork or potato masher to create a rough surface. The second time, smash them more firmly to flatten them out.
  • Roast the potatoes until they are crispy: Roast the potatoes at a high temperature (425 degrees Fahrenheit) until they are crispy and browned. This will take about 20-25 minutes.

Conclusion:

Smashed Parmesan potatoes are a delicious and easy side dish that can be enjoyed with a variety of meals. They are crispy on the outside and fluffy on the inside, with a cheesy Parmesan flavor. These potatoes are sure to be a hit with your family and friends.
