16 chicken wings, tips discarded
¼ cup olive oil
¼ cup dry rub for chicken (such as McCormick® Grill Mates®)
1 pound mesquite wood chips, soaked in water
1 (8 ounce) bottle blue cheese salad dressing

Steps:

  • Place chicken wings in a large bowl. Pour in olive oil; toss with hands until coated. Coat wings evenly with dry rub.
  • Light charcoal and heat smoker to 170 to 200 degrees F (77 to 93 degrees C) according to manufacturer's instructions.
  • Drain wood chips and place half of them directly on the charcoal. Spread wings evenly on the cooking grate skin-side down.
  • Smoke wings until fragrant, about 1 hour.
  • Flip wings. Add remaining wood chips to the charcoal. Continue smoking until an instant-read thermometer inserted near the bone reads 165 degrees F (74 degrees C), about 1 hour more.

Steps:

3 pounds chicken wings (12 to 14)
3 garlic cloves
3/4 cup dry red wine
1/4 cup water
1 teaspoon sweet Spanish smoked paprika*
1 1/2 tablespoons Sherry vinegar
2 teaspoons sugar
2 teaspoons salt
For smoked-paprika mayonnaise
1/3 cup mayonnaise
1 teaspoon medium-dry Sherry
1/4 teaspoon sweet Spanish smoked paprika*

Steps:

  • Cut off wing tips, reserving for another use, and halve wings at joint. Put wings in a large sealable plastic bag. Finely chop garlic and add to bag with wine, water, paprika, vinegar, sugar, and salt. Seal bag, pressing out excess air. Marinate wings in bag in a large bowl, chilled, turning bag once, at least 8 hours and up to 24.
  • Preheat oven to 400°F.
  • Arrange wings in a roasting pan or large shallow baking pan large enough to hold them in one layer and pour marinade over them. Roast wings in middle of oven 30 minutes. Turn wings over and roast until marinade is reduced to a glaze and wings are golden brown, 25 to 30 minutes more.

1/4 cup sugar
1/4 cup kosher salt
6 medium chicken wings, cut at the joint
Freshly cracked black pepper
Tangy Honey Mustard BBQ Sauce, recipe follows
1 cup crushed salted pretzel sticks
1/2 cup yellow mustard
2 tablespoons stone-ground mustard
2 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1/2 teaspoon granulated garlic
Freshly cracked black pepper

Steps:

  • Mix the sugar and salt with 8 cups (2 quarts) water in a large container until dissolved. Add the chicken wings and brine for 1 hour at room temperature or refrigerated.
  • Place the wood chips in a smoker box and place the smoker box directly on a burner on the grill, under the grate. Cover, turn the burner under the smoker box to high and heat until the chips start to smoke, 5 to 10 minutes. Once smoking, turn off that burner, turn the other burners to low and heat until the thermometer registers 275 degrees F.
  • Dry the chicken pieces with a paper towel and season with cracked black pepper. Add the chicken to the grill over the set burners, close the lid and smoke the wings, maintaining a grill temperature of 250 to 275 degrees F and turning the wings once, until the meat registers 165 to 170 degrees F, about 1 hour. Raise the set burners to medium high and sear both sides of the wings until golden and crispy, 2 to 3 minutes per side.
  • Immediately toss the wings with some of the Tangy Honey Mustard BBQ Sauce, then sprinkle with the crushed pretzels to add some crunch and serve!
  • Mix together the yellow and stone-ground mustard, vinegar, honey, brown sugar, Worcestershire and granulated garlic. Season with plenty of freshly cracked pepper.

3 cups hickory wood chips, divided
3 pounds chicken wings
2 tablespoons Cajun seasoning, or as needed
2 tablespoons butter
2 tablespoons minced garlic
2 tablespoons Cajun seasoning
16 ounces hot sauce (such as Frank's Red Hot ®)
4 cups vegetable oil, or as needed

Steps:

  • Preheat smoker to 200 degrees F (95 degrees C) and add 1 cup wood chips to start the smoke rolling.
  • Liberally coat chicken wings with about 2 tablespoons Cajun seasoning.
  • Place wings directly on the grate in the smoker or in an aluminum pan with holes to allow airflow. Add more wood chips as needed to continue smoke. Smoke wings for 2 hours.
  • Combine butter, garlic, and 2 tablespoons Cajun seasoning in a large saucepan over medium-low heat; cook and stir until butter is melted, about 1 minute. Stir hot sauce into butter mixture; simmer, stirring occasionally, until sauce has thickened, about 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Preheat grill to 375 degrees F (190 degrees C).
  • Cook wings, 10 to 12 at a time, in the deep fryer until no wings are longer pink in the center and are lightly browned on the outside, 5 to 7 minutes. Remove wings from the oil with a slotted spoon, letting excess oil drain from the wings.
  • Place cooked wings on a baking sheet and liberally coat each wing with hot sauce mixture.
  • Place coated wings directly onto the grates of the preheated grill; cook until sauce has caramelized and wings are crisp, 2 to 3 minutes per side.
