SMOKED EGGS

Smoked Eggs image

This smoked egg recipe is incredibly easy. I learned it from a neighbor and it is a fun way to use up the extra space in your smoker grill. The eggs turn a lovely brown color and have a consistency similar to boiled eggs. The insides have a tinted brown color, too. Reduce cook time if you prefer a softer boiled egg.

SMOKED SALMON DEVILED EGGS

Smoked Salmon Deviled Eggs image

Provided by Ina Garten

Time 1h15m

Yield makes 16 appetizers

Number Of Ingredients 10

8 extra-large eggs
1/2 cup sour cream
2 ounces cream cheese, at room temperature
2 tablespoons good mayonnaise
1 tablespoon freshly squeezed lemon juice
2 tablespoons minced fresh chives, plus extra for garnish
4 ounces good smoked salmon, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 ounces salmon roe

Steps:

  • Place the eggs in a pot large enough to hold them in a single layer. Cover the eggs with cold water and bring to a full boil over high heat. As soon as the water boils, turn off the heat, cover the pot, and let the eggs stand for 15 minutes. Drain the eggs and fill the pot with cold water. Set aside until the eggs are cool.
  • Peel the eggs and then slice them in half lengthwise. Remove the yolks carefully. Place the yolks in the bowl of an electric mixer fitted with the paddle attachment and arrange the whites on a platter in a single layer with the cut sides up and sprinkle with salt.
  • To the egg yolks, add the sour cream, cream cheese, mayonnaise, lemon juice, chives, salmon, salt, and pepper. Beat on medium speed until fluffy. With a small spoon, fill the egg whites with the egg yolk mixture. Cover loosely with plastic wrap (you don't want to flatten the filling) and refrigerate for 30 minutes for the flavors to blend.
  • When ready to serve, garnish with a dollop of salmon roe and some extra chopped chives. Sprinkle with salt and pepper and serve.

BAKED EGGS WITH CRèME FRAîCHE AND SMOKED SALMON

Baked Eggs With Crème Fraîche and Smoked Salmon image

Runny-yolked eggs baked in individual ramekins or custard cups make for a very elegant brunch or light supper. These are bathed in a shallot-steeped crème fraîche and topped with smoked salmon for an especially rich result. Serve them with toast, croissants or crusty bread - something to mop up the last bits of yolk and cream at the bottom of the ramekins. You won't want to leave behind a single drop.

Provided by Melissa Clark

Categories     breakfast, brunch, seafood, main course

Time 45m

Yield 6 servings

Number Of Ingredients 10

2 tablespoons unsalted butter, plus more for greasing the ramekins
2/3 cup thinly sliced shallot (2 to 3 shallots)
1/2 teaspoon fine sea salt
3/4 cup heavy cream
1/3 cup crème fraîche
1 tablespoon chopped fresh dill, plus more for serving
1/2 teaspoon finely grated lemon zest
12 large eggs, at room temperature
Freshly ground black pepper
4 ounces smoked salmon

Steps:

  • Heat oven to 400 degrees, and brush six 8-ounce ramekins or ovenproof custard cups with butter. Place the ramekins or cups on a rimmed baking sheet.
  • Melt 2 tablespoons butter in a medium skillet over medium heat. Stir in shallots and 1/4 teaspoon salt, and cook until very soft, 7 to 10 minutes, reducing heat if necessary to prevent browning.
  • Stir in 6 tablespoons cream, the crème fraîche, dill, lemon zest and remaining 1/4 teaspoon. Remove from heat. Divide mixture among the ramekins.
  • Crack 2 eggs into each ramekin and float 1 tablespoon of cream on top of each, then sprinkle tops with salt and pepper. Bake until egg whites are just set, and yolk is still runny, 12 to 16 minutes. (The eggs will look slightly puffed at the sides of the ramekins, but still jiggly in the center and that's O.K. The eggs will continue to cook once out of the oven.) Remove from oven and transfer ramekins onto individual plates for serving.
  • To serve, top each ramekin with some of the smoked salmon and a little more dill. Serve warm.

COLD SMOKED EGGS

Cold Smoked Eggs image

Cold Smoking hard boiled eggs will provide a nice smoke flavor and maintain the integrity of the egg. Hot smoking typically over cooks the eggs making them rubbery and dry. Best to team this up with cold smoking other foods such as salmon and bacon. Some people will soak the eggs in a brine or tea for additional flavor. Separate a portion of brine from other foods to avoid cross contamination. Smoked eggs can be used just like a plain old boild egg.

Provided by Chefro

Categories     Very Low Carbs

Time 3h20m

Yield 12 Eggs, 6 serving(s)

Number Of Ingredients 2

1 dozen egg
2 cups brine (optional)

Steps:

  • Hard Boil the eggs and soak in cold water immediately until cool enough to peel.
  • If brining, put peeled eggs into a container and cover with brine for an hour or longer. I use a zip lock bag with the air sucked out to minimize the amount of liquid needed to surround the eggs.
  • Place in smoker away from any heat source, best to keep the temp as low as possible.
  • Remove after 3 hours or when they are slightly brown. Keeping them in longer will impart a stronger smoke flavor but the eggs will also dry out. You will need to experiment with timing to get your preferred flavor.

Tips:

  • Use fresh eggs: Fresh eggs are essential for smoking, as older eggs may have a higher chance of contamination.
  • Choose the right smoker: There are many different types of smokers available, so choose one that is the right size and type for your needs. If you're new to smoking, a charcoal or electric smoker is a good option.
  • Prepare your eggs: Before smoking, wash the eggs thoroughly and pat them dry. You can also brine the eggs for a few hours in a mixture of water, salt, and sugar to add flavor.
  • Smoke the eggs: Place the eggs in the smoker and smoke them according to the manufacturer's instructions. The smoking time will vary depending on the type of smoker and the desired level of smokiness.
  • Cool the eggs: Once the eggs are smoked, remove them from the smoker and let them cool completely.
  • Peel and enjoy: Once the eggs are cool, you can peel them and enjoy them as desired. Smoked eggs can be eaten on their own, used in salads, or added to other dishes.

Conclusion:

Smoking eggs is a great way to add a unique flavor to your dishes. With the right smoker and a little bit of time, you can easily smoke eggs at home. Whether you're looking for a simple snack or a flavorful addition to your next meal, smoked eggs are a delicious and versatile option.
