SMOKED GOUDA CHEESE MACARONI
Steps:
- Preheat the oven to 375 degrees F. Put the water, 1/2 teaspoon of the salt, and the oil in a large, heavy saucepan over high heat and bring to a boil. Add the macaroni and cook, stirring occasionally, until tender, about 8 minutes. In a small, heavy saucepan, melt 2 tablespoons of the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes. Slowly add the milk, whisking constantly. Add the remaining 1/2 teaspoon salt and the white pepper and continue whisking until the sauce is smooth and thick enough to coat the back of a wooden spoon, about 8 minutes. Remove the white sauce from the heat and stir in the cheese. Continue stirring until the cheese melts. Lightly grease a 6 1/2 by 10-inch casserole dish with the remaining 1/2 teaspoon butter. Combine the cheese sauce and macaroni in a large mixing bowl and mix well. Pour into the prepared casserole and bake until lightly golden on top, about 20 minutes. Remove from the oven and serve hot. Garnish with parsley.

SMOKED GOUDA CHEESE GRITS
Delicious side dish for breakfast or dinner. The Gouda gives a taste unlike other cheese grits I have had. Of course, cheddar or other cheese can be substituted. I got this from a lady in Louisiana.

SMOKED GOUDA AND ROASTED RED PEPPER GRILLED CHEESE
Smoked gouda, while having a wonderful and inimitable flavor, has trouble achieving that gooey, iconic cheesy stretch that makes grilled cheese sandwiches so pleasing. By adding a partner cheese with a less assertive flavor and higher melting property, like deli muenster, you can achieve both melting and flavor perfection.

Steps:
- Lay out 4 slices of the bread on a work surface. Layer each with some of the smoked gouda, 1 slice of the muenster, a thin layer of sliced red pepper (about 2 tablespoons), 1/2 cup of the baby arugula and another layer of smoked gouda. Close the sandwiches with the remaining bread. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.
- Place 2 sandwiches into a medium nonstick skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches.

SMOKED GOUDA MAC AND CHEESE
This is a marvelously smooth mac and cheese with a bit of a bite. My family loves this. I got the idea from a recipe made on a popular cooking show, and adapted it to my own recipe and tastes. Delicious contrast if served with a 'sweet' main dish.

SMOKED GOUDA CHEESE DIP
This has got to be my husband's favorite cheese dip! Whenever we have a family party, we always request the dip from my sister (the creator), and the jalapenos make a great dare for the adventurous! This recipe is very much "to your own taste", hence the minimal measurements, but I promise it will be worth it!

SMOKED GOUDA MACARONI AND CHEESE
Don't be tempted to use anything less than extra sharp cheddar cheese. For this dish to have the cheesy flavor expected, it requires a VERY sharp cheese combined with the smoked gouda.

Steps:
- Fry bacon in a large skillet until crisp, remove to paper towels to drain. Add panko bread crumbs and toast in skillet until golden. Remove from heat and crumble bacon into bread crumbs, toss to combine.
- Using salted water, cook the pasta according to package directions, but do not rinse; set aside.
- Melt butter in a large saucepan over medium-low heat; whisk in flour until smooth. Continue whisking and cook for 2 minutes. Gradually whisk in the milk. Whisking constantly, cook for 5 minutes or until thickened. Reduce heat to low and stir in salt, black pepper and most of the cheese (note: add cheese about a cup at a time, stirring to incorporate so as not to cause graininess).
- In a large bowl combine cooked pasta and cheese sauce. The sauce will be thin, but will thicken once baked.
- Pour the pasta mixture into a lightly greased 8 x 11 x 2 baking dish. (Use a spatula to scrape out every ounce of that saucy goodness.) Sprinkle the top with the remaining cup of cheese and sprinkle with the prepared bacon/panko topping. (note: a layer of shredded parmesan cheese may be added prior to the sprinkling of the crumb topping, if desired.).
- Bake at 400° for 20-30 minutes or until bubbly. Remove from oven and allow to rest about 10-15 minutes.

Reduce heat to low and stir in salt, black pepper and most of the cheese, reserving about a cup of cheese. Pour the pasta in a lightly greased 8 x 11 x 2 baking dish. Spoon the cheese sauce over the pasta, stirring lightly to even out the sauce in the pan. Sprinkle the top with the remaining cup of cheese and the paprika. Steps:
- After soaking the almonds and cashews, drain and rinse them. Place in a high-powered blender. Add 1/2 cup water, lemon juice, agave, mustard, liquid smoke, nutritional yeast, salt, paprika, garlic powder and minced dried onion. Blend until creamy. The mixture will be thick. If you have a Vitamix with a plunger, use that to keep the mixture moving. Otherwise, stop your machine occasionally to scrape the sides down. Test for grittiness by rubbing it between your thumb and finger. If you feel grit, keep blending. Once the cheese mixture is ready, it is time to make the agar. In a small sauce pan, bring 1 cup of water to light boil, add the agar. Stir continuously until the agar had dissolved. This can take several minutes. Keep whisking! If it gels up in the pan, return to heat and melt it down again. Start the blender and get a vortex going with the mixture. Drizzle in the agar gel and blend until combined. You will need to stay focused and move fairly quickly. Agar will start to set up as it cools. Pour into mold and then place in the fridge, uncovered, for at least 30 minutes. Eat sliced or shred! Note ~ I don't use anything to prepare my molds to help them release once it has set. It is good about just popping out. Keep in the fridge up to 5 days.
Tips:
- Use a variety of cheeses for a more complex flavor profile.
- Choose cheeses that melt well, such as mozzarella, cheddar, and Gouda.
- Grate the cheese finely so that it melts evenly.
- Use a double boiler or a low-heat method to melt the cheese slowly and prevent it from burning.
- Add seasonings and herbs to taste.
- Serve the cheese sauce immediately or store it in the refrigerator for later use.
Conclusion:
Smoked Gouda cheese sauce is a versatile and delicious condiment that can be used in a variety of dishes. It is perfect for dipping, spreading, or using as a topping. With its smoky flavor and creamy texture, smoked Gouda cheese sauce is sure to be a hit at your next party or gathering.
