6 cups water
1 teaspoon salt
1/8 teaspoon vegetable oil
1 pound ditalini or small elbow macaroni
2 tablespoons plus 1/2 teaspoon unsalted butter
2 tablespoons bleached all-purpose flour
2 1/2 cups milk
1/4 teaspoon freshly ground white pepper
1/4 pound smoked Gouda cheese, grated
Parsley

Steps:

  • Preheat the oven to 375 degrees F. Put the water, 1/2 teaspoon of the salt, and the oil in a large, heavy saucepan over high heat and bring to a boil. Add the macaroni and cook, stirring occasionally, until tender, about 8 minutes. In a small, heavy saucepan, melt 2 tablespoons of the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes. Slowly add the milk, whisking constantly. Add the remaining 1/2 teaspoon salt and the white pepper and continue whisking until the sauce is smooth and thick enough to coat the back of a wooden spoon, about 8 minutes. Remove the white sauce from the heat and stir in the cheese. Continue stirring until the cheese melts. Lightly grease a 6 1/2 by 10-inch casserole dish with the remaining 1/2 teaspoon butter. Combine the cheese sauce and macaroni in a large mixing bowl and mix well. Pour into the prepared casserole and bake until lightly golden on top, about 20 minutes. Remove from the oven and serve hot. Garnish with parsley.

3/4 cup uncooked quick-cooking grits

4 ounces smoked gouda, very thinly sliced with a cheese slicer
4 slices muenster cheese (about 4 ounces)
1 medium jarred roasted red pepper, drained, dried and thinly sliced
2 cups baby arugula
6 tablespoons unsalted butter, softened

  • Lay out 4 slices of the bread on a work surface. Layer each with some of the smoked gouda, 1 slice of the muenster, a thin layer of sliced red pepper (about 2 tablespoons), 1/2 cup of the baby arugula and another layer of smoked gouda. Close the sandwiches with the remaining bread. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.
  • Place 2 sandwiches into a medium nonstick skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. 3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F. Butter 11 x 7 x 2-inch glass baking dish. Bring milk to boil in medium saucepan. Remove from heat. Melt 4 tablespoons butter in heavy medium saucepan over low heat. Add flour; stir 3 minutes. Gradually whisk in warm milk. Increase heat to medium; whisk constantly until mixture is thick and smooth, about 4 minutes. Remove sauce from heat. Whisk in yolks. Cool slightly.
  • Melt 1 tablespoon butter in large skillet over medium heat. Add shallots; sauté until tender, about 3 minutes. Transfer to large bowl. Mix in sauce, spinach, 1 1/3 cups cheese, salt, pepper and nutmeg. (Can be made 2 hours ahead. Cover and let stand at room temperature. Stir over low heat until just lukewarm before continuing.)

2 cups all-purpose flour
2 teaspoons black pepper
1 cup beer
1 tablespoon olive oil
Black Bean Salsa, recipe follows
1/2 cup sour cream
1 medium tomato, seeded and diced
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped green onions
12 fresh chives, cut into 1-inch pieces
2 tablespoons butter
1 medium onion, diced
2 garlic cloves, minced
2 (15-ounce) cans black beans, drained
2/3 cup picante sauce
2 medium tomatoes, seeded and diced
2 teaspoons chili powder
1 teaspoon iodized salt
1/2 teaspoon black pepper
1/4 teaspoon ground cumin
3 tablespoons chopped fresh parsley leaves

Steps:

  • Stir together milk and 3/4 cup water in a 1 1/2-quart saucepan over medium-high heat; bring to a boil. Stir in grits, cheese, and 1/2 teaspoon salt. Cook, stirring constantly, 9 minutes or until thickened. Stir in 2 tablespoons butter. Pour grits into a lightly greased 11 by 7-inch baking dish. Cover and chill 3 hours or until firm.
  • Combine flour, 2 tablespoons salt, and pepper in a shallow dish. Pour beer into a small bowl.
  • Cut grits into 2-inch squares. Dip grits squares into beer; dredge in flour mixture, repeating procedure twice.

1 (7 ounce) package oscar meyer slow roasted roast beef, deli thin
4 slices smoked gouda cheese
8 slices multi grain bread
8 tablespoons mayonnaise
butter
pickle (optional)

Steps:

  • Heat a sandwich grill or pan on medium -low heat while preparing the sandwiches.
  • Take 8 pieces of bread and spread 1Tbs. of mayonnaise on each slice.
  • Add roast beef and smoked gouda cheese to 4 slices of bread with mayonnaise. Top with the other 4 slices of bread with mayonnaise.
  • Add butter to pan or top the sandwich with spreadable butter and grill til lightly browned. Repeat til you have 4 sandwiches grilled.

1 1/2 c milk
3/4 c quick cooking grits
4 Tbsp butter or margarine
garlic , pepper, salt to taste

  • 1. Mix the chicken broth and milk in a saucepan and bring to a boil. Add the grits slowly, stirring constantly. Turn the heat down and cover with a lid and cook until grits are done stirring occasionaly. I use quick grits.
  • 2. Remove from stove and add additional ingredients. Stir until cheese and butter is melted.
  • 3. I like to taste the chicken broth and milk and adjust the seasonings at the beginning.

5 slices bacon
1 1/2 cups panko breadcrumbs
1 lb short pasta (penne, elbow macaroni, etc)
4 tablespoons butter
4 tablespoons all-purpose flour
4 cups milk
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
8 ounces sharp cheddar cheese, grated and divided (about 2 cups)
8 ounces smoked gouda cheese, grated and divided (about 2 cups)

Steps:

  • Fry bacon in a large skillet until crisp, remove to paper towels to drain. Add panko bread crumbs and toast in skillet until golden. Remove from heat and crumble bacon into bread crumbs, toss to combine.
  • Using salted water, cook the pasta according to package directions, but do not rinse; set aside.
  • Melt butter in a large saucepan over medium-low heat; whisk in flour until smooth. Continue whisking and cook for 2 minutes. Gradually whisk in the milk.   • Bake at 400° for 20-30 minutes or until bubbly. Remove from oven and allow to rest about 10-15 minutes.

VEGAN SMOKED GOUDA CHEESE RECIPE

1/2 cup raw almonds, soaked
1/2 cup raw cashews, soaked
1/2 cup water
2 Tbsp fresh lemon juice
1 tsp raw agave nectar
1 tsp fresh pre-made mustard
1/2 tsp liquid smoke
1/4 cup nutritional yeast
1/2 tsp sea salt
1 tsp smoked paprika
1 tsp garlic powder
1 Tbsp minced, dried onion
1 cup water
5 Tbsp agar flakes or 1 1/2 Tbsp agar powder

Steps:

  • After soaking the almonds and cashews, drain and rinse them. Place in a high-powered blender. Add 1/2 cup water, lemon juice, agave, mustard, liquid smoke, nutritional yeast, salt, paprika, garlic powder and minced dried onion. Blend until creamy. The mixture will be thick. If you have a Vitamix with a plunger, use that to keep the mixture moving. Otherwise, stop your machine occasionally to scrape the sides down. Test for grittiness by rubbing it between your thumb and finger. If you feel grit, keep blending. Once the cheese mixture is ready, it is time to make the agar. In a small sauce pan, bring 1 cup of water to light boil, add the agar. Stir continuously until the agar had dissolved. This can take several minutes. Keep whisking! If it gels up in the pan, return to heat and melt it down again. Start the blender and get a vortex going with the mixture. Drizzle in the agar gel and blend until combined. You will need to stay focused and move fairly quickly. Agar will start to set up as it cools. Pour into mold and then place in the fridge, uncovered, for at least 30 minutes. Eat sliced or shred! Note ~ I don't use anything to prepare my molds to help them release once it has set. It is good about just popping out. Keep in the fridge up to 5 days.
