Provided by Ming Tsai

Categories     main-dish

Number Of Ingredients 20

1 pound salmon fillet, center cut, skin off
1/2 cup mirin
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/4 cup ginger julienne
1 teaspoon toasted Szechwan peppercorns
1 cup long grain rice
1 cup sugar
1 cup oolong tea or black lychee tea
2 cups warm riced potatoes (boiled in salted water, drained well)
1 tablespoon butter
1/4 cup sliced green scallions
1 tablespoon horseradish
1 tablespoon wasabi powder mixed with a little water to form paste
Salt and black pepper
Salt and black pepper
1 cup all-purpose flour
3 eggs, beaten
1 cup panko bread crumbs

Steps:

  • Cut the salmon in 4 equal pieces and place in a small hotel pan or baking dish. In a bowl, mix together mirin, water, sugar and salt, stir until dissolved. Add ginger and peppercorns to liquid. Pour brine on salmon and marinate for 1 hour. Pull salmon out of brine and place in a bamboo steamer.
  • In a wok lined with foil add the rice, sugar and tea. Mix well and turn wok on medium heat. When mixture starts to smolder, place bamboo steamer on top. Seal the seam between the bamboo steamer and wok with wet cloths. Turn wok down to low and smoke for 15 minutes. Turn wok off and let smoke another 15 minutes. Salmon will be about medium rare and should be served warm.
  • For the "latkes": In a bowl, mix warm potatoes and butter. Mix in scallions, horseradish and wasabi. Season with salt and pepper. Shape potato mixture into 2 1/2 inch diameter cakes. Dredge the cakes in flour followed by egg and finally panko. Deep fry cakes at 350 degrees until golden brown.
  • Plating: Put a small mound of apple salad in the center of the plate, a potato cake on top and the salmon on top of the cake. Drizzle emulsion around the plate and garnish with chives.

SALMON WITH WASABI AND GINGER

Salmon With Wasabi and Ginger image

This recipe is loosley based on something similar from Cooking Light. My wonderful daughter liked it so much, she took all of the leftovers for lunch and didn't leave me any!!! I freeze my ginger and when I need it, I take it out of the freezer for about 5 minutes before I grate it. If you let it thaw somewhat, it is easier to grate and you get more of the ginger rather than the ice crystals

SMOKED SALMON TARTARE WITH GINGER AND SESAME

Smoked Salmon Tartare with Ginger and Sesame image

Categories     Fish     Appetizer     No-Cook     Summer     Bon Appétit     Sugar Conscious     Kidney Friendly     Pescatarian     Dairy Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 6 first-course servings

Number Of Ingredients 11

2 tablespoons fresh lemon juice
1 teaspoon wasabi powder
6 ounces sliced smoked salmon (not lox), finely chopped
1/4 cup finely diced seeded peeled English hothouse cucumber
1 tablespoon minced fresh cilantro
1 tablespoon minced green onion
1 tablespoon toasted sesame seeds
1 1/2 teaspoons minced peeled fresh ginger
1 teaspoon oriental sesame oil
2 8x1 1/2-inch strips dried nori (cut from one 8x8-inch sheet)
Water crackers or Japanese rice crackers

Steps:

  • Stir lemon juice and wasabi powder in medium bowl to blend. Mix in salmon, cucumber, cilantro, green onion, sesame seeds, ginger and sesame oil. Shape all of salmon mixture into 1 1/2-inch-thick patty, about 3 1/2 inches in diameter. Moisten ends of nori strips. Wrap nori strips snugly around sides of patty, pressing ends together to seal. Place salmon tartare on platter. (Can be made 4 hours ahead. Cover; refrigerate.) Surround with crackers.

Tips:

  • Choose high-quality ingredients. Use fresh, high-quality salmon, wasabi, and pickled ginger for the best flavor.
  • Don't overcook the salmon. Salmon is a delicate fish that can easily be overcooked. Cook it until it is just cooked through, but still slightly pink in the center.
  • Use a good quality bread. A sturdy bread that can hold up to the toppings is best. A baguette or sourdough bread works well.
  • Be creative with your toppings. In addition to the salmon, wasabi, and pickled ginger, you can also add other toppings to your tartines, such as avocado, cream cheese, or capers.
  • Serve immediately. Tartines are best served immediately after they are made. The bread will get soggy if you let them sit for too long.

Conclusion:

Smoked salmon, wasabi, and pickled ginger tartines are a delicious and easy-to-make appetizer or lunch. They are perfect for a party or potluck, and they can also be enjoyed as a quick and easy meal. With a few simple ingredients, you can create a dish that is both flavorful and visually appealing. So next time you are looking for a new and exciting recipe, give these tartines a try. You won't be disappointed!
