2 plum tomatoes, chopped
1 medium red onion, finely chopped
4 green onions, finely chopped
1/3 cup minced fresh cilantro
2 garlic cloves, minced
1/3 cup orange juice
1 teaspoon ground cumin
1 teaspoon grated orange zest

2 cups cooked black beans
1 cup chopped fresh tomato
1/2 cup chopped red onion
3 tablespoons minced fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon minced chipotle chile in adobo
1/2 teaspoon salt, to taste
for corn cakes
1 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup shredded sharp cheddar cheese
1 cup buttermilk
4 tablespoons unsalted butter, melted
1 cup corn kernel
oil, for skillet
sour cream (to garnish)

Steps:

  • Toss together all the salsa ingredients, taste for seasoning. Allow to sit while you prepare the corn cakes, then taste again before serving, adjust seasoning if necessary.
  • To make the corn cakes, Mix together the cornmeal, baking powder, salt, baking soda and cheddar. Add the buttermilk, butter and corn, gently fold together. Do not overmix.
  • Heat a large skillet, coat with a film of oil. Drop batter by the tablespoon onto the hot skillet. Cook until bubbles break on the tops of the cakes, then flip them over. Cook a few minutes more, or until the bottoms brown and one tests done.
  • Keep warm in a low oven until they are all cooked.
  • To serve, place three or four cakes on a plate, dollop some sour cream, and top with salsa.

1 small onion
1 chipotle chile (either canned in adobo or dried)
two 15- to 16-ounce cans black beans
2 teaspoons olive oil
3/4 cup fresh orange juice

Steps:

  • Mince onion. If using dried chipotle, in a bowl soak in boiling-hot water to cover 5 minutes and drain. Wearing protective gloves, mince soaked or canned chipotle. In a colander rinse black beans well and drain.
  • In a 2- to 3-quart heavy saucepan cook onion in oil over moderately low heat, stirring, until softened. Add chipotle and cook, stirring, 2 minutes. Add beans, 1 cup water, and orange juice and simmer, mashing mixture 3 or 4 times with a potato masher, until slightly thickened, about 15 minutes. Season beans with salt.

1 (14 1/2 ounce) can corn, drained
2 large tomatoes, seeded and chopped (Romas have few, if any seeds)
1 medium chopped purple onion
1/4 cup chopped cilantro
2 chopped avocados
3 -4 tablespoons lime juice
1 teaspoon salt
2 tablespoons olive oil
1 tablespoon red wine vinegar
1/2 teaspoon pepper
Tostitos Scoops, 2 bags (optional, not needed if you're serving as a salad)
