SMOKY HAWAIIAN CHICKEN SALAD

Smoky Hawaiian Chicken Salad image

I was obsessed with this chicken salad when it was served at Long John Silvers in the late '80s. It was eventually removed from the menu and massive cravings led me to develop my own formula and reproduce it at home. The smokehouse almonds are the secret ingredient. I have tried it with both mayonnaise and Miracle Whip but the Miracle Whip is much more authentic. Sweet, smoky and super tasty!

5 pounds chicken breasts
2 tablespoons ground black pepper
1 tablespoon celery salt
1 pound celery, diced
1 medium red onion, diced
1 teaspoon caraway seeds
30 ounces mayonnaise

Steps:

  • Boil chicken breasts in a pot filled with water until no longer pink in the centers and juices run clear, about 40 minutes.

Tips:

  • To achieve the best flavor, use ripe and juicy pineapple. Fresh pineapple is ideal, but canned pineapple can also be used if necessary.
  • If you don't have any liquid smoke, you can add a teaspoon of smoked paprika instead. This will give the chicken salad a slightly smoky flavor.
  • Feel free to adjust the amount of mayonnaise and sour cream to your liking. You can also use Greek yogurt instead of sour cream for a healthier option.
  • For a more flavorful chicken salad, use rotisserie chicken instead of boiled chicken. Rotisserie chicken has a delicious smoky flavor that will enhance the overall taste of the salad.
  • If you want to add some crunch to the salad, you can add some chopped celery or red onion.
  • Serve the chicken salad on a bed of lettuce or in a lettuce wrap for a light and refreshing meal.

Conclusion:

Smoky Hawaiian chicken salad is a delicious and easy-to-make dish that is perfect for a summer cookout or potluck. It is also a great way to use up leftover chicken. The combination of smoky, sweet, and tangy flavors makes this salad a real crowd-pleaser. So next time you are looking for a new and exciting chicken salad recipe, give this one a try.
