SMOKY BRUSSELS SPROUT GRATIN

Smoky Brussels Sprout Gratin image

There are two cheeses in this gratin: smoked Gouda in the sauce and salty aged Gouda sprinkled on top. Other melting cheeses, such as Gruyere and fontina, won't have the same smoky flavor but are good alternatives to the smoked Gouda; on top, try freshly grated Parmesan.

Time 1h

Number Of Ingredients 9

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole milk
Coarse salt and freshly ground pepper
2/3 cup grated smoked Gouda cheese (2 ounces)
Coarse salt
1 1/2 pounds brussels sprouts
2/3 cup finely grated aged Gouda (2 ounces)
Smoked flaked sea salt, such as Maldon (optional) or regular sea salt

Steps:

  • Preheat oven to 375 degrees. Make the bechamel: Melt butter in a saucepan over medium heat. Add flour and whisk until mixture bubbles slightly but has not started to brown, about 2 minutes. Gradually whisk in milk. Raise heat to medium-high and bring to a boil, whisking often. Reduce heat to low and cook, stirring occasionally with a wooden spoon, until thickened, 12 to 15 minutes. Season with coarse salt and pepper. Remove from heat. Add smoked Gouda and stir until melted.
  • Meanwhile, blanch the brussels sprouts: Bring a medium pot of salted water to a boil. Cook brussels sprouts until just tender when pierced with the tip of a paring knife, 3 to 4 minutes. Drain and transfer to an 8-cup (8-by-12-inch) baking dish.
  • Assemble the gratin: Pour bechamel over brussels sprouts and sprinkle with aged Gouda and a pinch of smoked sea salt. Bake, uncovered, until bubbling and golden, about 25 minutes.

BRUSSELS SPROUTS WITH CHORIZO

Brussels Sprouts With Chorizo image

Beloved brussels sprouts, which have enough personality to stand up to forceful seasoning, are often paired with bacon or pancetta, and generously peppered. Here, flavorful Spanish chorizo and smoky pimentón complement and enhance the stalwart vegetable. They play beautifully together. Use fresh, soft chorizo, not the aged salami-like kind.

Time 20m

Yield 6 servings

Number Of Ingredients 7

2 tablespoons extra-virgin olive oil
8 ounces fresh, soft Spanish chorizo, chopped in 1/2-inch pieces
1 1/2 pounds brussels sprouts, trimmed and sliced 1/4-inch thick
Salt and pepper
3 garlic cloves, minced
1/2 teaspoon pimentón (Spanish smoked paprika), picante (hot) or dulce (sweet)
2 tablespoons roughly chopped parsley

Steps:

  • In a wide skillet, warm olive oil over medium-high heat until hot but not smoking. Add chorizo and let sizzle for a minute or so, until it releases some of its fat.
  • Mash chorizo with a wooden spoon, encouraging it to crumble. Cook, stirring, until slightly browned, about 2 minutes more. Use a slotted spoon to remove chorizo and set aside. Leave oil bubbling in skillet.
  • Add brussels sprouts to the skillet, and season generously with salt and pepper. Raise heat to high and cook, stirring, until sprouts are tender and lightly browned, about 10 minutes. Reduce heat if needed to prevent scorching.
  • Add garlic and pimentón and stir to coat. Return chorizo to pan and cook, stirring, 2 minutes more. Sprinkle with parsley and transfer to a serving dish. Serve hot.

Categories     Vegetable

Time 45m

Yield 3-4

Number Of Ingredients 14

30 -40 Brussels sprouts (halved)
1 diced shallot
1 -2 tablespoon olive oil
20 cherry tomatoes (halved)
2 3/4 cups vegetable broth (plus up to one cup extra as needed)
1/2 lb whole wheat orzo (about 227 grams)
2 lemons, juice of
3 -5 teaspoons smoky seasoning (your favorite or one below)
1 tablespoon dry mustard
1 tablespoon onion powder
1 tablespoon smoked paprika
1/2 tablespoon garlic powder
1/4 tablespoon ground cumin
1/4 tablespoon ground black pepper

Steps:

  • In a large pan, saute the scallions and brussels sprouts in the olive oil on medium heat for about 8 minutes. The brussels sprouts should be mostly cooked before adding the orzo.
  • Add the tomatoes and saute for another minute.
  • Add the 2 3/4 cup of veggie broth and bring to a boil.
  • Add the uncooked orzo, lemon juice and seasoning mix and give everything a good stir.
  • Turn the heat down and let this simmer for about 20 minutes, until orzo is tender. Stir every now and then to make sure there is enough liquid to keep the orzo from sticking to the pan. If this happens, add veggie broth. Only add a little at a time because the excess liquid should be absorbed by the time the orzo is cooked.

Tips:

  • Soak the orzo in salted water for 1 hour before cooking. This will help to remove the starch and prevent the orzo from becoming sticky.
  • Roast the Brussels sprouts and tomatoes at a high temperature. This will help to caramelize the vegetables and bring out their natural sweetness.
  • Use a flavorful cheese, such as Parmesan or Asiago, for the sauce. This will add a rich and nutty flavor to the dish.
  • Add a splash of lemon juice or white wine to the sauce. This will help to brighten the flavors and add a touch of acidity.
  • Serve the orzo immediately, while it is still hot. This will ensure that the dish is at its best.

Conclusion:

Smoky orzo with Brussels sprouts and tomatoes is a delicious and easy-to-make dish that is perfect for a weeknight meal. The smoky flavor of the orzo pairs perfectly with the roasted vegetables, and the creamy sauce adds a touch of richness. This dish is sure to please everyone at the table.
