1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
4 large basil leaves, chopped
2 sun-dried tomatoes packed in oil, drained and chopped
4 cups water
1 dried chipotle chili pepper
1 bay leaf
2 cups sweet peas
1 tablespoon vegetable bouillon
1 tablespoon red wine vinegar
½ cup shredded Gruyere cheese
1 pinch freshly ground black pepper

Steps:

  • Heat the olive oil in a large saucepan over medium-high heat. Add the onion, and cook until it begins to brown, about 5 minutes. Add the garlic, basil, and sun-dried tomatoes; cook and stir until the garlic has softened, about 2 minutes more. Pour in the water along with the chipotle pepper, bay leaf, bouillon, and vinegar. Add the peas, and bring to a boil, then reduce heat to medium-low. Simmer for 15 minutes.
  • Remove the soup from the heat, and discard the chipotle pepper and bay leaf. Carefully puree the soup until silky smooth in batches in a blender, or use an immersion blender right in the saucepan. Serve the soup with a sprinkle of Gruyere cheese and freshly ground black pepper.

3 tablespoons extra-virgin olive oil
3 garlic cloves, minced
1 small leek, white and pale-green parts only, thinly sliced and rinsed well
1 tart green apple, such as Granny Smith, cored, peeled, and cut into 1-inch chunks
1 celery stalk, thinly sliced
1 teaspoon finely grated fresh ginger
2 pounds sweet potatoes, peeled and cut into 1-inch cubes
6 cups chicken stock
1 medium canned chipotle chile in adobo sauce
Coarse salt and freshly ground pepper
1/2 cup salted pepitas (green hulled pumpkin seeds)

Steps:

1/4 cup diced bacon
1 tablespoon oil
3 tablespoons all-purpose flour
1 cup thinly-sliced leeks
1 quart light stock
3 cups peas, preferably fresh
1/4 cup heavy cream
Salt and pepper
1 tablespoon chopped chives, for garnish

Steps:

  • In a soup pot, cook bacon until crispy, remove to paper towels to drain, and reserve for garnish. Add oil and flour to pot and cook for 3 minutes, stirring. Add leeks and cook 3 minutes. and add stock. Bring to a boil, reduce heat and simmer for 30 minutes. Add peas and cook 5 minutes. Using an immersion blender, puree soup in the pot; or pour soup into a food processor or blender, process until smooth and return to pot. 1 teaspoon smoked paprika (can add more to taste)
1 teaspoon chopped chipotle chile, canned in adobo sauce (more if you like it really spicy)

1 teaspoon oregano, chopped (optional)
1 large sweet potato, peeled and diced (3 cups, you can use winter squash if you like instead or even carrots)
2 medium onions, diced (3 cups)
3 celery ribs, diced (1 cup)
4 -6 garlic cloves, minced (4 tsp.)
6 cups water (or vegetable stock)
1 (14 ounce) can diced tomatoes

Steps:

  • Soak split peas in large bowl of cold water overnight(some reviewers said they boiled the peas for 30 or 40 minutes rather than soaking and it worked fine).
  • Heat oil in 3-qt. saucepan over medium heat. Add paprika, chipotle, and cumin if using, and stir. Add sweet potato(or squash), onions, and celery, and season with salt and pepper, if desired. Cover, and cook 10 minutes, or until onions are soft and translucent. Add garlic, and sauté 2 minutes.
  • Drain split peas, and add to pot with 6 cups water(I use about 4 cups vegetable stock and 2 cups water). Bring soup to a boil, reduce heat to medium-low, and simmer 1 hour. Add tomatoes, and cook 30 minutes more, or until split peas are tender.

2 slices bacon, diced
1 medium onion, chopped
1 large leek, trimmed, washed and minced (both white and pale green parts)
2 -4 garlic cloves, chopped
2 sweet potatoes, peeled and cut in 1 inch cubes
2 1/2 cups chicken stock
1/4 teaspoon dried thyme
1/8 teaspoon ground nutmeg
2 -4 pickled jalapeno peppers, minced
1/4 cup half-and-half
salt
1/2 cup sour cream

Steps:

  • In heavy skillet cook the diced bacon until crisp, remove bacon from skillet and reserve for other uses.
  • To the same skillet with bacon drippings, add the chopped onion, leek and garlic; cook over low heat, stirring occasionally until vegetables are soft, approximately 10 to 15 minutes.
  • Add the cut sweet potatoes and stir for 5 minutes.
  • Stir in the chicken stock, thyme and nutmeg, bring to a boil.
  • Partially cover and simmer over low heat until the sweet potatoes are tender, about 2o to 30 minutes.
  • Transfer the potatoes, vegetables and most of the broth to the blender reserving remaining broth in a separate container.
  • Puree the potato mixture until smooth, return the puree to the soup pot, add cream and thin with remaining broth to desired consistency.

  • To serve, reheat soup stirring often, garnish with sour cream and pickled jalapenos.
  • The soup can be made ahead of time and reheated before serving.
