SMOTHERED CHICKEN
Steps:
- Cut away excess skin and fat from chicken pieces. Rinse with cold water and set aside; do not pat dry.
- In a shallow bowl, stir together fry coating and 1 tablespoon chicken seasoning. Dredge chicken pieces in coating mixture; set aside.
- In a large straight-sided pan, heat 1/2-inch oil over medium-high heat. Oil is ready for frying when a drop of water splatters when dropped in.
- Fry coated chicken until golden brown, about 8 minutes per side. Remove chicken from pan and drain oil.
- In a medium bowl, stir together gravy, remaining chicken seasoning, and crushed garlic; set aside.
- Return chicken to pan over medium heat. Cover with gravy. Bring to a boil. Reduce heat, cover and simmer for 10 to 20 minutes or until completely done (no pink near the bone).
- Serve hot.

Cover and cook on low until chicken is cooked through, 2 hours.
- Stir peas and tarragon into barley; season with salt and pepper; and transfer to a platter. Arrange chicken on bed of barley and serve.
CHICKEN WITH BARLEY SOUP
This is a high-protein, high-fiber, and low-fat recipe that is very filling. I usually double the recipe so I have plenty of leftovers. The soup freezes well. This soup comes out very thick; if you like a thinner soup, add more water or reduce the barley to 1/2 cup. This soup recipe is very flexible. Adjust amount of veggies and seasonings to your family's taste.

Got this one online from someone else's site. It's fantastic. I never use the mint flakes, as I don't have any.

Tips:
- To achieve a crispy and flavorful chicken, ensure the skillet is very hot before searing. This will help create a golden crust while preventing the chicken from sticking.
- Use a good quality, flavorful broth for both the braising liquid and the barley cooking liquid. This will impart rich flavor to the dish.
- Don't overcrowd the skillet when searing the chicken. This will prevent even cooking and can result in soggy chicken.
- Season the chicken generously with salt and pepper before searing, and again before braising. This will help enhance the flavor of the chicken.
- If you don't have a Dutch oven, you can use a large pot or skillet with a lid. Just make sure the lid fits tightly to prevent the liquid from evaporating.
- Serve the smothered chicken with barley immediately after cooking, garnished with fresh parsley or chives.
Conclusion:
Smothered chicken with barley is a hearty and flavorful dish that is perfect for a weeknight meal. It is easy to make, and the combination of tender chicken, savory barley, and creamy sauce is sure to please everyone at the table. This dish is also a great way to use up leftover chicken, and it can be easily adapted to your own preferences. For example, you could use different vegetables, or you could add a touch of spice with some chili powder or paprika. No matter how you make it, smothered chicken with barley is a delicious and satisfying meal that is sure to become a family favorite.
