SMOTHERED PORK CHOPS & TATERS

Smothered Pork Chops & Taters image

I actually came up with this recipe as a way to use up left over sawmill gravy. My husband, who isn't much into casseroles, really does like this recipe. These yummy pork chops would be a great warm-up comfort food on a cold night. You can either use left-over gravy or make your own, just pour it over, bake and enjoy!

Time 1h45m

Number Of Ingredients 5

4 medium pork chops (you can either use bone in or boneless)
5 to 6 medium potatoes
1/2 c all purpose flour
salt and pepper to taste
2 to 2 1/2 c white gravy (you may either make your favorite recipe fresh or use left-over)

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9 X 13 casserole dish with cooking spray.
  • 2. Peel and slice potatoes and layer into bottom of prepared casserole dish. Sprinkle with salt and pepper, set aside. Dredge pork chops in flour and brown on both sides in hot oil. When pork chops are browned, arrange on top of potatoes.
  • 3. If using left-over gravy, remove from refrigerator and heat on top of stove. Add more liquid, if necessary. Pour gravy on top of pork chops and potatoes. Cover tightly with aluminum foil and bake for about 1 1/2 hours. Serve hot with vegetable and rolls or biscuits.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 12

4 large potatoes
8 ounces sour cream
2 tablespoons all-purpose flour
1/2 cup flour
1/2 cup water
2 beef bouillon cubes
1 tablespoon black pepper
2 tablespoons butter
10 ounces mushrooms
1/2 cup white onion, chopped
1 teaspoon minced garlic clove
1 tablespoon italian seasoning

Steps:

  • Preheat oven to 350 degrees.
  • Scrub potatoes and clean then up.
  • Stab them all over with a fork. If you want soft skins than you need to rub the outside with butter and then wrap in foil.
  • Place potatoes in a metal bake sheet and bake at 350 degrees for 70 to 80 minutes or until tender. *Hint* Some Microwaves have settings that make baked potatoes but do not cover them in foil.
  • Start preparing the next part of the meal when the potatoes have about 30 minutes left.
  • In a bowl you need to add 8 ounces of sour cream and 1/2 cup of flour.
  • Place the bouillon granules on the chopping board. Use a clever turned side ways to press the granules flat. This should make them like a powder.
  • Add the bouillon powder, 1/2 cup of water, and some pepper in to the bowl and stir.
  • Once you have the mixture stirred you can set it aside.
  • In a skillet put two tablespoon of butter, one tablespoon of minced garlic, mushrooms, and your desired amount of onions.
  • Cook over medium heat until the mushrooms cook down to your liking.
  • Add the flour mixture to the skillet.
  • Add the desired amount of salt pepper and Italian Seasoning.
  • Cook and stir until thickened and bubbly.
  • Cut the cooked potatoes in half, mash the insides up a little, pour the sauce over the top, and Enjoy!

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for smothered taters because they are starchy and hold their shape well. You can also use Yukon Gold or red potatoes, but they will be more likely to fall apart.
  • Don't overcrowd the pan: When browning the potatoes, make sure to leave enough space between them so that they can brown evenly. If you overcrowd the pan, the potatoes will steam instead of brown.
  • Use a well-seasoned pan: A well-seasoned pan will help to prevent the potatoes from sticking. If you don't have a well-seasoned pan, you can grease it with cooking spray or oil.
  • Cook the potatoes until they are tender: The potatoes should be cooked until they are tender when pierced with a fork. If the potatoes are not cooked through, they will be hard and difficult to eat.
  • Don't overcook the potatoes: If you overcook the potatoes, they will become mushy. Cook them just until they are tender, then remove them from the heat.
  • Use a flavorful broth: The broth that you use to smother the potatoes will add a lot of flavor to the dish. Use a broth that you enjoy the taste of, such as chicken broth, beef broth, or vegetable broth.
  • Add your favorite toppings: Once the potatoes are smothered in broth, you can add your favorite toppings. Some popular toppings include cheese, bacon, green onions, and sour cream.

Conclusion:

Smothered taters are a delicious and easy-to-make dish that can be enjoyed for breakfast, lunch, or dinner. They are a great way to use up leftover potatoes, and they can also be made ahead of time and reheated. With so many different variations to choose from, there is sure to be a smothered tater recipe that everyone will enjoy.
