Salt and freshly ground black pepper
3 tablespoons olive oil
2 small yellow onions, sliced with the grain
1 bulb fennel, cored and cut into very thin wedges
2 tomatoes, cut into small wedges
1 teaspoon herbes de Provence

  • Broil just until a bit crusty, about 1 more minute. Squeeze lemon juice on the fish and serve.

VERACRUZ-STYLE RED SNAPPER

Veracruz-Style Red Snapper image

I like red snapper for this, but any white, flaky fish will work. By the way, many Veracruz-style fish recipes call for pickled jalapenos, but I think there's plenty of acidity in this from the lime and tomatoes, so I like the fresh pepper a little more.

Tips:

  • To ensure the snapper fillets are evenly cooked, make sure they are of a similar thickness. If necessary, use a sharp knife to butterfly the thicker fillets.
  • Pat the snapper fillets dry before cooking to prevent the fish from sticking to the pan.
  • Season the snapper fillets with salt and pepper, and then coat them in flour. This will help to create a crispy crust.
  • When cooking the snapper fillets, be sure to use a non-stick skillet or pan coated with cooking spray to prevent the fish from sticking.
  • Cook the snapper fillets over medium heat for 3-4 minutes per side, or until they are golden brown and cooked through.
  • To make the Provencal sauce, start by sautéing garlic, onion, and bell pepper in olive oil. Then, add diced tomatoes, tomato paste, and white wine. Simmer the sauce for 15 minutes, or until it has thickened.
