SNICKERDOODLE BLONDIES

I've seen this recipe on several food blogs and was obsessed with them. Being a big fan of Snickerdoodle cookies, I knew the moment I saw these I had to give them a whirl. What impressed me most about this recipe was that it was super basic, no need to run out and buy anything special, just raid your fridge and pantry and bake away! These are super easy to make and will have your house smelling heavenly in 10 minutes. These bars go great with a cup of piping hot coffee! Now get obsessed with these bars and get to baking! My hats off to Julia of Dozen Flours who I adapted this from and tweaked to create this new favorite of my family and friends :) Now everyone asks me for the recipe! I have not seen a recipe on Zaar like this, so I am posting it here to share!

Time 35m

Yield 20-24 bars depending on size you cut them of course!

Number Of Ingredients 11

2 2/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon kosher salt
2 cups packed brown sugar
1 cup butter, room temperature
2 eggs, at room temperature
1 tablespoon vanilla extract
2 tablespoons granulated sugar
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350 degrees F. Lightly grease and/or line a 9×13 inch pan. Combine the flour, baking powder, cinnamon, nutmeg and salt and set aside.
  • In large bowl, beat together butter and brown sugar for 3-5 minutes. Add in the eggs one at a time, then the vanilla, and beat until smooth.
  • Stir in the flour mixture until well blended. Spread evenly in prepared pan (mixture will be somewhat cookiebatter-ish, so it's best to spread it out with a greased spatula or your hands -- I just spray a spatula with cooking spray). Combine the granulated sugar and cinnamon, in a little bowl. Evenly sprinkle cinnamon sugar mixture over the top of the batter.
  • Bake 25-30 minutes or until surface springs back when gently pressed. Cool before cutting. Makes 20-24 bars.

Time 1h45m

Yield about 16 bars

Number Of Ingredients 10

Nonstick cooking spray
2 sticks (1 cup) unsalted butter, at room temperature
1 1/4 cups granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon fine sea salt
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9-by-13-inch baking pan with nonstick spray and line with parchment, leaving a 2-inch overhang on the long sides for lifting out the finished bars.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a handheld mixer), cream the butter with 1 cup of the granulated sugar and all of the brown sugar until light and fluffy, 4 to 5 minutes.
  • Scrape the bowl well with a rubber spatula, then add the eggs one at a time and mix on medium speed after each addition until well combined. Beat in the vanilla.
  • Add the flour, baking powder and salt and pulse until they start to combine, then scrape the bowl well and mix on low speed until the dough is uniformly combined.
  • Scoop the dough into the prepared pan and press into an even layer. Stir the remaining 1/4 cup granulated sugar with the cinnamon in a small bowl. Sprinkle the cinnamon sugar evenly over the bars.
  • Bake until the edges are golden and the center is set, 25 to 30 minutes.
  • Let cool completely in the pan, then run a small spatula around the edge. Use the parchment overhang to carefully lift the bars out of the pan. Cut into 16 equal bars.

Tips:

  • Use room temperature butter and eggs to ensure that the ingredients blend together smoothly.
  • Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter, resulting in a chewy blondie.
  • Do not overmix the batter. Overmixing can result in a dense, dry blondie.
  • Add the dry ingredients to the wet ingredients gradually, mixing until just combined. Overmixing can result in a tough blondie.
  • Bake the blondies until a toothpick inserted into the center comes out with just a few moist crumbs attached.
  • Allow the blondies to cool completely before cutting them into bars. This will help to prevent them from crumbling.

Conclusion:

Snickerdoodle blondie bars are a delicious and easy-to-make treat. They are perfect for potlucks, bake sales, or simply enjoying at home. With their chewy texture, sweet and cinnamony flavor, and crunchy sugar topping, these blondies are sure to be a hit with everyone who tries them. So next time you are looking for a quick and easy dessert, give these snickerdoodle blondie bars a try!
