CHICKEN AND MANGO SOBA SALAD WITH PEANUT DRESSING

Chicken and Mango Soba Salad With Peanut Dressing image

Japanese buckwheat noodles are usually served cold or in a hot soup, but here, they're given a bright jolt of color and texture. Delightfully chewy soba noodles are combined with chicken, mango, snap peas, cucumber and a spicy peanut dressing for a great warm-weather lunch that's also picnic-friendly. Serve it alongside any grilled meat or fish, or leave the chicken out to make it vegetarian. To make this ahead, prepare all the salad components in advance, but wait until serving time to combine to keep flavors and textures vibrant.

SOBA NOODLES WITH CHICKEN AND SNAP PEAS

Soba Noodles With Chicken and Snap Peas image

A simple sesame-soy dressing coats chewy soba noodles, tender chicken and crisp sugar snap peas in this dish that's good at room temperature or cold. It's a great way to use leftover or store-bought rotisserie chicken, but also works well without. You can double up on the snap peas instead or fold in other vegetables, like grated carrots, shredded cabbage or thinly sliced bok choy. The quick daikon pickles add a bright tangy crunch, but you can skip them and still enjoy this one-bowl meal.

SOBA WITH SESAME PEANUT SAUCE

Soba With Sesame Peanut Sauce image

A nice Asian side dish that goes very well with seafood skewers. I personally add a little more peanut butter because I like the taste and to thicken the sauce a little more.

Provided by lazyme

Categories     Asian

Time 15m

Yield 4 serving(s)

Number Of Ingredients 13

8 ounces soba noodles (buckwheat noodles)
1 teaspoon sesame oil
5 tablespoons sesame seeds
1 inch fresh ginger
1 garlic clove
2 green onions
2 tablespoons sesame oil
2 tablespoons soy sauce
1 tablespoon rice vinegar
1/2 teaspoon hot chili oil
1 tablespoon sugar
1/3 cup peanut butter
1/3 cup warm water

Steps:

  • Cook noodles in 4 quarts rapidly boiling water for 3 to 4 minutes, or until just tender.
  • Refresh under cold water and drain.
  • Toss with 1 teaspoon sesame oil.
  • Lightly toast sesame seeds in a dry skillet over medium heat.
  • Transfer seeds to a bowl.
  • Mince ginger and garlic.
  • Finely chop green part of green onions and mince the rest.
  • Combine half the sesame seeds, ginger, garlic, white part of onions, sesame oil, peanut butter, warm water, soy sauce, rice vinegar, hot pepper oil and sugar.
  • Correct seasoning, adding soy sauce or vinegar to taste. (May be prepared ahead to this stage.)
  • Just before serving, toss noodles with sauce.
  • Sprinkle with reserved green onions and sesame seeds and serve.

Tips:

  • Use fresh ingredients whenever possible. This will result in a more flavorful and nutritious dish.
  • Don't be afraid to adjust the recipe to your own taste. If you like things spicy, add more chili sauce. If you prefer a milder flavor, use less.
  • Be careful not to overcook the chicken. Chicken is best when it is cooked through but still slightly juicy.
  • If you don't have a bamboo steamer, you can steam the chicken and vegetables in a colander set over a pot of boiling water. Just make sure to cover the colander with a lid so that the steam doesn't escape.
  • Serve the soba noodles with your favorite toppings. Some popular options include green onions, cilantro, peanuts, and a squeeze of lime juice.

Conclusion:

Soba noodles with chicken and peanut sauce is a delicious and healthy meal that is perfect for a quick and easy weeknight dinner. The combination of flavors and textures in this dish is sure to please everyone at the table. So next time you're looking for a new and exciting recipe to try, give this one a try. You won't be disappointed!
