Served to me by a lovely friend in St. Anne's, Lancashire, England. I had to have the recipe and I wanted to share it with you.

¼ cup butter
4 boneless pork loin chops
1 teaspoon chopped fresh thyme
1 large onion, sliced into thin rings
1 clove garlic, crushed
1 Cox apple, cored and cut into thick rings
1 red apple, cored and cut into rings
1 teaspoon white sugar
salt and pepper to taste
1 ⅛ cups dry hard cider
3 tablespoons heavy cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large heavy skillet, over medium-high heat, melt half of the butter. Fry the pork chops on both sides until a nice golden color. Transfer the chops to a 2 quart casserole dish with a lid, and sprinkle with thyme.
  • Melt the remaining butter in the pan, and fry the onion and garlic until tender. Transfer them to the casserole dish. Fry the apple rings in the pan for a few seconds on each side to give them color, then remove to the casserole dish. Sprinkle with sugar.
  • Spoon any excess fat from the frying pan and pour in the apple cider. Stir to remove any flavorful bits from the bottom. Bring the mixture to a simmer, then pour over the pork chops and apples in the dish. Season with salt and pepper.
  • Bake the casserole, covered for 30 to 40 minutes, or until the pork chops are cooked through. Remove the pork chops and apples to a serving platter and stir the cream into the juices. Serve sauce over pork chops.

4 boneless skinless chicken breast halves (6 ounces each)
1/4 teaspoon pepper
2 tablespoons olive oil
1 each medium green, sweet red and yellow peppers, julienned
2 thin slices prosciutto or deli ham, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/4 cup reduced-sodium chicken broth
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano

Steps:

  • Sprinkle chicken with pepper. In a large nonstick skillet, brown chicken in oil. Remove and keep warm. In the same skillet, saute peppers and prosciutto until peppers are tender. Add garlic; cook 1 minute longer., Add the tomatoes, broth, basil, oregano and chicken. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until a thermometer reads 170°.

4 chicken portions
2 ounces butter
1 medium onion, peeled and diced
1 ounce flour
3/4 pint milk
1/4 pint dry somerset cider
4 ounces cheddar cheese, grated
1 teaspoon made English mustard
salt and pepper

Steps:

  • Set oven to 350ºF or mark 4.
  • Melt half the butter in a frying pan and lightly brown the chicken pieces.
  • Transfer to a caserole dish and roast for approximately 1 hour until cooked through.
  • Prepare the sauce by melting the remaining 1 oz butter in a saucepan and gently cooking the onion until soft and transparent. Stir in the flour and cook gently for 2 to 3 minutes, stirring all the time.
  • Remove the pan from the heat and stir in the milk and cider gradually.
  • Return to the heat and bring to the boil, stirring all the time until the sauce thickens.
  • Cook for 2 to 3 minutes. Remove from the heat and stir in three quarters of the cheese, the mustard and salt and pepper to taste. Pour the sauce over the cooked chicken, sprinkle with the remaining cheese and brown in a hot oven or under a grill.
  • Serve hot with green vegetagles and jacket potatoes.

1 tbsp oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 large carrot, finely chopped
1 leek, chopped
1 tbsp tomato purée
400g can chopped tomato
200g can butter bean, drained
400g can flageolet bean, rinsed and drained
200ml dry cider
250ml vegetable stock
few sprigs thyme, leaves only
cheddar & parsley mash (see tip below)
2 sausages
1 tsp olive oil per portion

Steps:

  • Heat oil in a large pan and fry the onion, garlic, carrot and leek until soft but not coloured. Add the tomato purée, chopped tomatoes, butter beans, flageolet beans, cider, stock and thyme and simmer for 15-20 mins until the stew has thickened and the veg are tender.
  • Meanwhile, if you're adding sausages to any portion, snip each sausage into 3-4 chunks. Heat the olive oil in a frying pan and brown the chunks for 5 mins, then stir in appropriate portions of the stew and gently simmer for the remaining cooking time. Serve with the mash.
